Mum's Swedish Meatballs

These were pretty good. The meatballs were a little to soft and didn't really hold their shape very well. Less milk maybe. I simmered the meatballs in the gravy to finish them off.

Vegetable Beef Soup III

This was very tasty. I didn't have any vegetable juice so I used tomato sauce and beef broth. I had to add a lot of extra seasoning but that okay. Brought this to Sunday dinner after church and everyone liked it :)

Thanksgiving Leftovers Casserole

Easy. Tasted pretty good. The thought of the mayo kind of threw me a little but it was very tasty. I made this after a pre-Thanksgiving dinner I had. Only thing I would add would be some leftover gravy to pour on top. Yum.

MVP Chili

This was very tasty. I did change it a little. I needed a large batch of chili so I used 2lbs Johnsonville Ground Mild Italian sausage and 1lb of ground beef. Went a little heavier on the spices. I also was out of black beans so I just used kidney beans. And I left out the corn. Personal preference. Very good chili. My family loved this.

Easy peasy. I used Ore-Ida Tater Tots instead of the potatoes :) So even easier. I love throwing tots into breakfast tacos/burritos. I did use larger tortillas since its what I had on hand. Yummy. Added some onion powder and other seasonings to the eggs.

Johnsonville Italian Sausage Sliders

These were fantastic. I was surprised they were so quick to make. I've never done sliders because I thought they would take to long. But I had dinner on the table in 40 minutes. Which is great for a busy night. I cooked them on the griddle then finished them in the oven while my fries were baking. Kids loved these and my husband really really loved them. I didn't add any extra seasoning. The Johnsonville sausage takes care of all the flavoring :) Will make these again.

Oh so yummy! I'd never thought of using Italian sausage in a breakfast dish. I did use Johnsonville Ground Mild Italian sausage instead of links and I didn't have any fontina cheese so used Colby instead. And the kids loved this too.

Potato Soup III

I thought the soup was really great, and then I added the potato flakes. Eh kind of killed the flavor. It was still good but it was better before I added it. My family really liked it I just couldn't get over the processed taste of the instant taters. Guess I'm not a fan of potato flakes. Didn't know that. I left out the corn because of personal preference.

Quick Mediterranean Pasta

Twice Baked Potato Casserole With Bacon

Tasty casserole. I didn't use any dried chives on top and instead of baking the potatoes I just boiled them then mashed them. Brought this for Sunday dinner after church and it was a hit.

Raspberry Lemon Muffins

These are great muffins. I used fresh raspberries and raspberry yogurt. Changed the serving size to 18 and got 12 muffins out of it. Kids devoured these after school.

Bison Fajitas with Guacamole Salad

Oh boy these are amazing! I used Bison Skirt Steak instead of flank. Also grilled the bison instead of cooking it on the stove. We loved the flavor of the bison. Great way to try bison for the first time! I didn't make the guacamole salad. Everyone absolutely loved this recipe. Thanks!

Asian Noodle Bowl

Well I found out that I do not like peanut sauce. Surprised me really but there ya go. I did think the sauce needed more heat. I shared this with my mom, aunt and cousin. They all thought it was good so I'm overruled with the peanut sauce. Although I will say I had to make jmy own peanut sauce so maybe that had something to do with it? The bison was delicious, I did add some sesame oil to the meat.

Three Bean Salad

Very delicious. Made this for a bridal shower and all the ladies loved it. I couldn't find the Salad and Vegetable seasoning so I used the Goya Sazón with Coriander and Annatto. It was very good. Also I couldn't find blackeyed peas, so I used black beans. Added minced red onion.

HERDEZ® Drowned Beef Sandwich with Chipotle Sauce (Torta Ahogada)

Really good. I made this for lunch today and we enjoyed it very much. I did have to change the meat because when I went to get my roast beef it was gone :/ But I had already started cooking so I used turkey. It worked very nicely. Beef would have been better but turkey worked in a pinch :) I did add cheese. Yummy.

Ooh spicy! I really hate avocados but I really enjoyed this. My avocados were tiny so I used 2. Very creamy and tasty. My boys loved this with chips. :) Also I misread the recipe and used a cup of the yogurt :/ But it was still delicious. Thanks!
