Better Help for Hamburger

This was pretty good as a base recipe. I added more potatoes than called for. Also seasoned the meat with taco seasoning, cumin and added green chilies along with the jalapeno. Really wish I would have had some tortillas on hand because this would make a nice filling.

One Skillet Corned Beef Hash

Very tasty. I used leftover corned beef instead of the canned kind. Really easy. I didn't measure the pepper or the vinegar, came out perfect. Served with fried eggs and toast. Yummy!

Kick'N Chicken with Mango Salsa

Great recipe. Everyone loved the chicken. Seasoning was great. This would make a great chicken sandwich. Everyone enjoyed the salsa as well. I did add a diced jalapeno for some heat. I only let the chicken marinate for 30 minutes and it really was great.

My husband liked this. I don't eat fish so I'm going off his review. He said it had good seasoning and really liked the sauce. Easy cleanup and very easy to put together.

Grilled Masala Chicken with Vegetables

Loved how easy the clean up was for this :) But I wasn't a fan of the flavor of the chicken. Loved the veggies. I thought that the chicken was missing something but I am not very familiar with the spices so I couldn't quite pinpoint what it needed. My husband and my youngest son loved it though. The chicken came out nice and juicy which is a big plus. Served this with brown rice.

Meatloaf for Tomato Haters

This was tasty. I usually make Italian meatloaf so this was a nice change. I didn't have a gravy packet so I made a quick brown gravy. Also I found out that I was out of bread crumbs so just made my own and seasoned with garlic, onion, cayenne and salt.

Tempura Fried Avocado Bites

The family liked these. But they thought that they needed salt. So I would salt the avocados before battering. I also thought that they could have used a little heat. Maybe some Tabasco sauce in the batter. Served with ranch, and jalapenos :)

Amazing Muffin Cups

Loved these! I liked the hashbrown crust and we loved the flavor of the muffins. My kids really enjoyed these. Bake time was perfect. I did add a bit of cayenne into the egg mix. Would love these with some mushrooms. Yummy! Great addition to a breakfast for dinner :) Served with fresh strawberries.

This was really good. Quick and easy to put together and it went over well at our Sunday Family potluck. I added some chopped frozen spinach. And I had to use shells instead of fettuccine. I'd make this again.

Sweet and Spicy Salmon with Grapefruit Salsa

I invited my aunt and cousin over for this. I do not like salmon. I did try it and all I can say was it will definitely not convert a fish hater :) So I asked them to rate it. They gave it 3 stars. Said it needed more salt and more heat. I did use mandarin oranges instead of grapefruit which worked nicely. Cooked perfectly in the time said.

Pork Carnitas with Cilantro Tomatillo Sauce

Loved the pork. I didn't really measure the spices but just seasoned to taste. I added some minced garlic and salt as well, also I used Mazola chicken bouillon. We really didn't care for the tomatillo salsa. I thought it really could have used some minced red onion and some acid. I did add some lime juice to it but was out of onion unfortunately. I'd make these again in the crockpot and skip the salsa :)

All-Day Apple Butter

Yummy! I cut the sugar down to 2 cups but I think next time I'll reduce it a little more. Flavor was great. I used an extra 2 pounds of apples and a mix of golden delicious, fuji and gala apples. Could be the apples I used that made it sweeter. Would definitely not use 4 cups of sugar though. Also I added some fresh ground nutmeg. Gave away as gifts and everyone loved it. I will make it again soon :)
