Eggplant Parmesan For the Slow Cooker

Reviewed: Mar. 20, 2013
Easy and delish! I skipped over the first steps, and just went straight for the layering. I'm sure skipping over the whole frying process might have killed some of the flavor, but I couldn't tell, and it was much healthier sans the oil. I just cut my eggplant into slices, sprayed the crockpot with PAM (which I did after every layer of eggplant to make the breadcrumbs stick without using fat) and started layering. I baked on HIGH 3 hours (since my eggplant went in totally raw), and it was done just right. I will use this recipe again, for sure!

Twice Baked Sweet Potatoes with Ricotta Cheese

I followed the recipe to the letter and it was great. I love the sage, it gives such a nice and unexpected flavor. I love sweet potatoes and this was a nice variation to a regualr spud!

Salmon Fillets with Creamy Dill

Reviewed: Apr. 6, 2009
Very good flavor. It did make more than I needed, but you can scale it to your tastes. I took the advise of another user and replaced the mayo with plain, non-fat yogurt to greatly reduce the fat content. I added a squeeze of lemon to the yogurt to give it that tangy flavoring of real mayo. Other than that, I didn't change anything and it come out amazing! Great recipe, thanks!!!

Black Bean and Corn Quesadillas

Reviewed: Mar. 30, 2009
This is really great! I have made almost the same recipe before, but it was always missign something...it was the brown sugar, that little bit of sweet makes ALL the difference, thanks!! I did spread some goat cheese on hte tortillas as well, gives it a gourmet twist...yum!

Sweet Potato Balls

Reviewed: Mar. 29, 2009
The taste was pretty good, but I love sweet potato. These were not balls at all and they were so runny that I had a hard time "coating" them with the corn flakes. Overall, I might try this again, but I would use fresh sweet potato so I could control the consistancy.

Cherry Cheese Pie II

Reviewed: Dec. 31, 2007
My mom always made it this way and I love it. I agree, 1/4 of a cup of lemon is plenty and allows it to set up a little better. I use fat free sweetend condensed milk and fat free cream cheese. It tastes the same and really cuts down on the fat (but not the sugar...this thing is sweeeeet)Enjoy!

Mango Bruschetta

Reviewed: Sep. 12, 2007
This is really great, but you have to add some things. I took soft swiss cheese(about three triangles) and added green chilis(half a small can), a couple drops of red hot pepper sauce and a bit of garlic powder. Then I mixed that together and spread it on the brochetta just after crisping the bread, as a base for the other flavors. I did everything else the same, except I added roasted red bell peppers as well. DELISH party tray!

Breaded Ranch Chicken

Reviewed: Aug. 10, 2007
Love this chicken!! I am a health nut, so I nixed the parmesan (though I'm sure that would be great and if I had some lowfat parmesan I would add it) and I used italian breadcrumbs instead of cornflakes because it was all I had. It was SO tender and the ranch gave it such a kick! I just mixed the breadcrumbs and ranch powder in a bowl, sprayed the chicken with cooking spray, and pressed them in the mixture. Then I baked it as directed. It was easy, healthy and de-lish! Try this one!

Pork Chops in Tomato Sauce

Reviewed: Jul. 19, 2007
I also simmered my pork chops for 45 min. which I would highly suggest. I used "no salt added" tomato sauce in order to watch the sodium count. It was tender and flavorful and would be great over rice or egg noodles!
