Eggplant Parmesan For the Slow Cooker
Easy and delish! I skipped over the first steps, and just went straight for the layering. I'm sure skipping over the whole frying process might have killed some of the flavor, but I couldn't tell, and it was much healthier sans the oil. I just cut my eggplant into slices, sprayed the crockpot with PAM (which I did after every layer of eggplant to make the breadcrumbs stick without using fat) and started layering. I baked on HIGH 3 hours (since my eggplant went in totally raw), and it was done just right. I will use this recipe again, for sure!

Twice Baked Sweet Potatoes with Ricotta Cheese
I followed the recipe to the letter and it was great. I love the sage, it gives such a nice and unexpected flavor. I love sweet potatoes and this was a nice variation to a regualr spud!

Salmon Fillets with Creamy Dill
Very good flavor. It did make more than I needed, but you can scale it to your tastes. I took the advise of another user and replaced the mayo with plain, non-fat yogurt to greatly reduce the fat content. I added a squeeze of lemon to the yogurt to give it that tangy flavoring of real mayo. Other than that, I didn't change anything and it come out amazing! Great recipe, thanks!!!
