My whole family loved this pumpkin loaf! Although, I took a few suggestions from others here and altered a few ingredients. I added 2 cups of brown sugar in lieu of just using white. I also replaced 1/2 cup of unsweetened applesauce and only used 1 cup of oil instead of the 1 1/2 cups. Lastly, I added 2 tsp of vanilla and only 1 tsp of the ground cloves. The loaves turned out great! Oh... I did have to alter my baking time also. It ended up taking an hour and 15 minutes for the loaves to bake fully. I am not sure if that was due to me changing the amount of oil and adding the applesauce or if it was because I used shiny metal pans instead of the dark non stick kind. But whatever the case, the loaves turned out moist and so flavourful! This recipe is definitely a keeper! Thanks! :)
