Hot and Spicy Tofu
This was very delicious. I did a couple of things differently. One of the reviewers suggested soaking the tofu n soy sauce and mirin, which I did for 30 minutes. I also roasted the capsicum (red bell pepper) before cutting it into strips. I cooked the vegis first, then added the tofu. It wasn't really all that hot and spicy though, so i think you'd need to adjust the chile pepper and flakes to suit your taste :)

Breaded, Fried, Softly Spiced Tofu
Very yummy. I would use a deep fryer on these next time tho. The breading kept sticking to the bottom of the pan.

Quinoa and Black Beans
This was pretty good! I saoked the quinoa for about 30 minutes in the vege stock before I put it in the pot. Only took about 10 minutes simmer time. I used marinated blackbeans instead of canned. Only need a very small amount otherwise the flavour swamps everything.
