Brown Sugar Smokies

Reviewed: Apr. 3, 2011
After making these many times with rave reviews, I found an easier way that saves some time. I cover the smokies in the brown sugar the night before & let marinate. A couple hours before I need to serve, I drain the accumulated juices/sugar into a pan. Put the smokies in a slow cooker on medium. I bring the previously drained sugary syrup to a low boil, then reduce to simmer, uncovered, until it is redced to a thicker syrup. Meanwhile, I cook a package of bacon, drain it and chop it up. Just before serving, I toss the crumbled bacon & thickened syrup with the smokies. Every smoky gets covered with sticky goodness and the bacon bits cling to every one. Serve with a cup of toothpicks on the side for skewering. Way less messy, super easy to transport and just as delicious!

Southwestern Egg Rolls

Reviewed: Apr. 3, 2011
These egg rolls are great and I've been making them for quite some time. However, while recently making some Chinese egg rolls, I noticed virtually the IDENTICAL recipe on the wrapper of the egg-roll wrapper package. So although these are definitely delicious, the recipe is definitely not original...

Banana Crumb Muffins

Reviewed: Sep. 6, 2010
Incredibly delicious!! I made these about a year ago and don't know where I went wrong, but I wasn't impressed and forgot about the recipe. However, I had a bunch of very ripe bananas and figured I'd give it another try. Boy, am I glad I did! I used 4 bananas, since mine were on the small side and forgot to add flour to the crumb topping, so it came out as more of a crunchy glaze. They were super moist inside and I will be making these regularly! Thanks for an outstanding recipe!

Sauteed Apples

Reviewed: Dec. 25, 2009
Mmmm...I'm a fan of apple pie, but only the filling. This hit the spot! I only had Gala apples & had to sub flour for the cornstarch, but it is delish! Sure to be a 5-star recipe when I can make it as written!

Mom's Zucchini Bread

Reviewed: Aug. 20, 2009
As I say in my house, "oh-so-delicious, and even somewhat nutritious!" This bread is just that. I did change two things, though. I omitted the nuts and used 1 cup of shredded carrots instead. Turned out fab! Thanks for a great way to sneak veggies into my especially picky 5-year old who ate more than her fair share!

Cedar Planked Salmon

Reviewed: Jun. 13, 2009
Mouthwatering! I didn't change a thing about the recipe and loved every bite! I served it with mango salsa and jasmine rice, but the salmon was perfect on its own. I rarely eat leftover salmon, but this was good enough to re-heat for lunch the next day! Thanks for a keeper!

Jalapeno Popper Spread

Reviewed: Jun. 13, 2009
Delish & the hit of a recent pool party we took it to. Served it with plain pita chips (Stacy's brand) and used the full 4-oz can of diced jalapenos, since we like things spicy. The bowl was cleaned and scraped within 15 minutes of arrival. Thanks for a terrific and EASY recipe!

Creamy Chicken and Wild Rice Soup

Reviewed: Apr. 25, 2009
Simple and delicious! The only reason I didn't give this 5 stars is because it is too rich for my taste if made with the specified amounts of butter & heavy cream. I used 1 tbsp. of butter and substituted 2% milk. Also used regular wild rice (not quick cooking). The soup turned out great! This is an extremely easy recipe, especially with a rotisserie chicken! Thanks for a keeper!

Lemon Grass and Chicken Summer Rolls

Reviewed: Oct. 18, 2008
I loved this. It's very similar to a deli product I order at a local asian market. Tasty & worth the little extra effort it takes to make my own! Thanks for the recipe!

Downeast Maine Pumpkin Bread

Reviewed: Sep. 12, 2008
Absolutely mouthwatering!! I've used a different pumpkin bread recipe for years that always gets rave reviews, but this one is even better! I added my own homemade cream cheese frosting on top just to make it even more finger-lickin' good. The only change I might make next time is to cut the sugar down by 1/2 a cup. Maybe...it's just so delicious the way it is! Thanks for a keeper!
