Spam Musubi

Reviewed: Mar. 8, 2014
I've never tried true Hawaiian musubi so I wasn't sure what to expect. I followed the recipe ingredients exactly and flavor was good but a tad too salty. Will use low sodium soy sauce in the future. Molding the rice without a musubi maker was disastrous for me, so I ended up slicing the cooked spam into strips and rolling it in the rice covered nori on a sushi rolling mat. Fun change of pace but not something I would crave.

Flourless Chocolate Cake I

Reviewed: Mar. 8, 2014
My 13-year old daughter made this with minimal help from me to take to a dinner with gluten-free guests. On the plus side, it was easy to make. We used a springboard pan but no water bath. The cake is definitely ultra rich like eating a truffle. We made a strawberry sauce to go on the side. While this was an okay dessert, I'd rather have a brownie or other chocolate treat. Too rich for me.

Braised Balsamic Chicken

Reviewed: Mar. 8, 2014
I followed the recipe exactly and even splurged on good balsamic vinegar. It was edible, but no one in my family liked it. Unfortunately, this will not be a keeper for us.

Juicy Roasted Chicken

Reviewed: Dec. 31, 2012
Definitely juicy! Like many other reviewers, I thought the ingredient list was way too simple to yield such glowing reviews. And, like many other reviewers, I was pleasantly surprised. I used half butter, half margarine, because that's what I had in my refrigerator. Other than that, I followed the recipe exactly. Cook time was a bit longer for me, but not substantially. The drippings made delicious gravy. I may use less margarine and swap in some garlic powder for the onion powder next time, but this recipe is definitely a keeper and one that I can add to my kids' list of dinners they can help prepare. Thanks for sharing!

Pumpkin Cranberry Bread

Reviewed: Dec. 2, 2012
It wasn't fantastic, but it wasn't bad, either. The bread was definitely moist and had a nice presentation, but it just lacked something in the way of flavor. I followed the recipe exactly, but the end product was still missing something. Since I've been craving a good cranberry pumpkin bread, I may just toss in a cup of fresh cranberries and use the Downeast Maine Pumpkin Bread from this site, which has proven time & again to be absolutely divine. This was a decent recipe, but not a keeper for me.

Cranberry Nut Bread I

Reviewed: Nov. 30, 2012
Not impressed, unfortunately. I had such high hopes, but this was on the bland side. I will give high marks for being moist and attractive when sliced, but it just wasn't very tasty, though I followed the recipe to a T. I'll keep looking for a more flavorful recipe.

Awesome Sausage, Apple and Cranberry Stuffing

Reviewed: Nov. 29, 2012
Very tasy stuffing! I decided, with some hesitation, to stray from my usual favorite recipe that belonged to my mom. This recipe was easy to make and flavorful without being over-the-top. I did reduce the amount of cranberries, since we were also having a salad with cranberries in it and I didn't want too much of a good thing. The stufing was great and everyone enjoyed it. Thanks for sharing a delicious recipe. This may become our new holiday stuffing recipe!

Roast Sticky Chicken-Rotisserie Style

Reviewed: Jul. 2, 2012
Super easy and super tasty. I have used this recipe for years and my family always asks for seconds. The leftover chicken makes awesome sandwiches or chicken salad as the chicken soaks up the marinade and is very tender. A definite keeper!

Lentil Soup

I followed this recipe exactly as written but I just didn't enjoy this soup. I found it to be bland and unappealing.

Sweet Potato Pie I

Reviewed: May 22, 2012
This was the first sweet potato pie I have made and while the recipe was easy and the pie baked up just fine, I thought the filling was too sweet. I made 4 of these pies for my daughter to serve in her class as part of her Kentucky State presentaton since it's a favorite Southern food. Though I thought it was too sweet for my taste, most of the kids loved it & several asked for seconds, which I didn't expect. The only change I made was to peel the sweet potatoes and cut them in chunks to boil as I was short on time & didn't have an hour to boil them whole. Overall, a good recipe, but I will reduce the sugar to 1/2 cup in the future.

Brooke's Best Bombshell Brownies

Very rich and delicious! Great brownies to make when I have time to go from scratch. When I'm short on time, I stick with "Brookies" fudgy brownie cookies :)

Kalbi (Korean BBQ Short Ribs)

Reviewed: Apr. 13, 2012
Love it! Tastes just like a recipe for "Maui beef" I once had & lost. I use flank steak or flap meat in one large piece and grill it, then slice thin. Perfect with rice or any Asian meal. Thanks for sharing!

Delicious Ham and Potato Soup

Reviewed: Apr. 13, 2012
I had leftover Easter ham to use,so decided to try this recipe. I followed the recipe exactly, using skim milk since that what I had on hand & the recipe didn't specify. The soup was just okay. Certainly easy to make, but just didn't "wow" any of us enough to want it again.

Best Brownies

Reviewed: Jan. 26, 2012
I followed the recipe exactly, and while the flavor of these brownies is good, they're more like a moist chocolate cake. I didn't care for the frosting and didn't use if on the brownies. I will keep searching for a chewy, fudgy brownie recipe.

Grill Master Chicken Wings

Reviewed: Sep. 4, 2011
Delish!! I made these tonight to go with a BBQ dinner; didn't put the pepper sauce on them because kids were dining with us, and the marinated wings were just as good as the ones we dipped into the hot sauce! The only change I made was baking them on a rack above a drip pan at 425 degrees for 40 minutes to free up grill space. Thanks for a keeper!

"Brookies" (Fudgy Brownie Cookies)

Super easy cookies from boxed brownie mix! I often make these without the Hershey's kisses for class parties, etc. and they're just as good.

Restaurant Style Beef and Broccoli

This recipe is very similar to the beef and broccoli my mom used to make. However, after she passed away, I haven't been able to replicate it...until now. Thanks for sharing an excellent recipe!!

Brown Sugar Smokies

Reviewed: Apr. 3, 2011
After making these many times with rave reviews, I found an easier way that saves some time. I cover the smokies in the brown sugar the night before & let marinate. A couple hours before I need to serve, I drain the accumulated juices/sugar into a pan. Put the smokies in a slow cooker on medium. I bring the previously drained sugary syrup to a low boil, then reduce to simmer, uncovered, until it is redced to a thicker syrup. Meanwhile, I cook a package of bacon, drain it and chop it up. Just before serving, I toss the crumbled bacon & thickened syrup with the smokies. Every smoky gets covered with sticky goodness and the bacon bits cling to every one. Serve with a cup of toothpicks on the side for skewering. Way less messy, super easy to transport and just as delicious!

Southwestern Egg Rolls

Reviewed: Apr. 3, 2011
These egg rolls are great and I've been making them for quite some time. However, while recently making some Chinese egg rolls, I noticed virtually the IDENTICAL recipe on the wrapper of the egg-roll wrapper package. So although these are definitely delicious, the recipe is definitely not original...

Banana Crumb Muffins

Reviewed: Sep. 6, 2010
Incredibly delicious!! I made these about a year ago and don't know where I went wrong, but I wasn't impressed and forgot about the recipe. However, I had a bunch of very ripe bananas and figured I'd give it another try. Boy, am I glad I did! I used 4 bananas, since mine were on the small side and forgot to add flour to the crumb topping, so it came out as more of a crunchy glaze. They were super moist inside and I will be making these regularly! Thanks for an outstanding recipe!
