About this Cook
I am currently a stay-at-home mom who has 2 little ones under the age of 4. I've always loved to cook and before I had kids I used to have a lot of dinner parties for friends. I love to bake and am always looking for that special dessert!
My favorite things to cook
I love to bake cakes and pies, I love Italian cooking--pasta is one of my favorite comfort foods along with almost anything southern.
My favorite family cooking traditions
Big family breakfast on Sunday morning with homemade biscuits and gravy, fried potatoes, my mom's homemade syrup, pork chops breaded and fried in an iron skillet and then simmered until they fall apart, my mom's fried chicken. My 3-yr-old and I have started new traditions by baking together.
My cooking triumphs
My pasta alfredo, sauce homemade and not from a jar, fresh-baked bread.
My cooking tragedies
When I was 18 I started cooking my own gravy and biscuits. I was getting pretty good at the gravy and bragged about it until one time I was cooking for about 6 friends who were waiting on my fabulous gravy--which didn't turn out--it was horrible!! I got teased for years!

Crispy Green Beans with Horseradish-Wasabi Dip
I want to make these for my daughter who has always loved green beans but is getting a little tired of the same-old-same-old. I am wondering, has anyone used can green beans for this recipe? Thanks

Chicken with Lemon-Caper Sauce
HAS POTENTIAL...please read! UPDATED! I love lemon chicken but the sauce was too lemony--1/4 cup lemon juice must be too much. Also, the author said be careful of the sauce breaking after you add the butter--you have to pay VERY close attention to the sauce at that point. I personally would prefer a creamier sauce...if anyone has any suggestions I would appreciate it, because I haven't had a good lemon chicken dish in years! UPDATE: I would also pound the chicken for tenderizing before cooking, plus it will make more servings if your chicken breasts are large. Next time I will try the suggestion from the other reviewer about making the sauce thicker and creamier.

Cornbread Salad
Try this variation--also add chopped cucumber, chopped green onion and crumbled bacon that's been fried to a crisp, otherwise it will get soggy after it sits in the mayo, or you can use Miracle Whip or ranch dressing if you prefer. We are from southern West Virginia and put a scoop of this right smack in the middle of a bowl of fresh cooked pinto beans--yummy!
