Fiesta Chicken Fajitas

Reviewed: Jan. 9, 2011
My famliy LOVED this dish!!! The cheese sauce was definitly a fun add in. It isn't very spicey or anything, I didn't think it had a ton of flavor, but it was still kinda good, the men in the family seemed to really like it. I didn't eat my fajita with just the cheese sauce and chicken so I guess I can't say to much about it. I of course added my own touches for our preferences when I was cooking the chicken. I put in cumin, cilantro and garlic because I was worried about the zingy tangy vinagary flavor of Italian dressing. It was really really good though!!! I also sliced up red and green peppers and an onion. I didn't put in green onion because it isn't a favorite of mine. For whatever reason the grocery store was out of guacamole, so I skipped on the avacado idea all together. We also had sour cream and salsa for people to add on. My husband said this recipe is a keeper. He usually prefers steak fajitas, but he really enjoyed this version. Also I loved how easy this was. Throw your sliced up chicken and salad dressing in a bag let it marinate for a while, slice up your veggies and throw it into a skillet season a little and that is about it.

Honey Mustard Chicken with Pretzel Crust

Reviewed: Sep. 9, 2010
I think this was good. My only thing was it didn't have a very strong pretzel taste, it was probably because of the mustards, but regardless it is very good! I will try this again but I will need to get a rack because some of the breading fell off.

California Grilled Veggie Sandwich

Reviewed: Sep. 9, 2010
This is really good, I think it is the sauce you put on it. I am trying to find healthy food options for my husband and I who eats meat 24/7 tried this and said "it's good." So that is a pretty big compliment!!! I did throw some garlic into the olive oil before brushing the veggies. It is a very versitile recipe!!

Sausage Mushroom Manicotti

Reviewed: Sep. 5, 2010
This was really good. Even my sister who doesn't like mushrooms alot liked this. It is a great alternative to the red tomato sauce or an alfredo on pasta. Only problem I had was with the sauce you put on top...mine didn't thicken up at all, but I just added some corn starch and more cheese and it was fine. I like alot of other people used fresh mushrooms which I think was a very good decision. My husband thought it needed more sausage like sliced up instead of ground up, so that will probably be what we do next time. Really good, soo glad we found this recipe

Cajun Chicken Pasta

Reviewed: May 21, 2010
YUM! Had a nice kick to it, not to spicy, but just a good kick! My only complaint is, I followed this recipe exactly, and it was sooooo runny, but I added cornstartch and it was an easy fix. Very good!! I do think you could cut back on some calories in a few places, with the cream and butter, and I plan on trying some other ways next time I make this!!!!!!

Best Chicken Ever

Reviewed: Mar. 4, 2010
Delicious. I did what others recommended with the pack of ranch seasoning in with the sour cream, and it really gives it a fun flavor. Also added some poultry seasoning and dill(my favorite spice), and frankly I think you can spice this up with whatever you like, very easy and basic recipe to make your own. I also used NO butter, I can't imagine why you would need it, it crispens up really nice. I have spritz butter and I spritz 2 spritz on each side just to keep it from sticking, but 6 tbsp of butter sounds like a heart attack

Chicken 'n' Biscuits

Reviewed: Mar. 4, 2010
Freakin yum!!!! SO SO SO good!! We totally love this recipe. I gotta say my husband hates veggies and I don't really like them when they are in a liquid, so I just left them out, and it was perfect. I add a ton of garlic and dill(just because it is our favorite spice) and it is so good!! I do use refrigerated Pillsbury Grands rolls, because I don't like biscuits. I do recommend starting your biscuits off on a pan, we had raw dough on the bottom the first time we made this, but it is very easily solved by baking them first.

Steak, Onion, and Pepper Fajitas

Reviewed: Mar. 4, 2010
I made some changes just on my preference, but regardless, this was sooo good!! I did make changes as I didn't have lime juice, but I did have margarita mix, so I marinated the steak in patron tequila, (which I am sure made a difference, don't use tequila you don't like the taste of) and margarita mix and it was really good!! I also had a pack of fajita seasoning I threw in, and I had never used liquid smoke before but I didn't notice a really smokey or off taste at all from it. I also didn't add as much oil like others said, maybe 2 tbsp, just because I didn't want my vegies slimy, and I added just a little more worcestershire and liquid smoke just so it had enough liquid. I also added a tiny pinch of corn starch because it did seem really runny, like a water consistancy, may have just been from the veggies watering it down, I am not sure...I made some fresh tortillas, and topped with some sour cream!!! My husband and I really enjoyed this!! Thanks!!!

Crispy Rosemary Chicken and Fries

Reviewed: Jan. 5, 2010
YUM!!! Soooo very very good!! My husband and I love this!! We are now putting it into regular circulation for dinner. My only recommendations, don't put the potatoes in with the chicken, bake the chicken then broil the potatos so they get crispy, because they did not crisp with the chicken. Do not be afraid of adding to many spices. We did the fresh herbs and garlic, and added in the dry stuff to. We probably used the same amount of spices for 2 chicken breasts as you should have used for 6, but that was ok, it was awesome!! Very forgiving recipe.

Baked Paprika-Parmesan Chicken

Reviewed: Aug. 21, 2006
I really liked this recipe. It was simple and easy. It was pretty forgiving, as I forgot to pour butter over the chicken and it still came out juicy and nice. It was nice that it wasn't fried or messy like that. Everyone really liked it, I did add some garlic and other spices to the batter. I also added some shredded cheese on top and baked it, which was good. I served it with linguini and red sauce and it was delicious!!! I really recommend this recipe if you are running short on dinner ideas!!!
