Creamy Pesto Shrimp

followed others' suggestions: sauteed 4 cloves of garlic in about 1T butter. Added half and half instead of cream. I ended up putting in a little cold water with cornstarch to thicken the sauce. Tossed with penne and broccoli. I'd suggest cooking the shrimp separately... it was hard to see when they turned pink, and they got overcooked.

Excellent as is. I split the bananas in 4 longwise and then diced them. used this recipe for 12 muffins, 6 mini loaves, and 12 mini muffins. muffins took about 26 min, mini loaves 28, and mini muffins 18

Fajita Seasoning

I made this recipe as is. Used about 1.5 bell pepper, 1lg onion, and 1lb of chicken breast. I sauteed the veggies first, then the chicken, both in a little oil. When the chicken was nearly done I added the veggies back in and added the seasoning (entire recipe) w/ about 3/4c of water and covered. I cooked it on medium high for about 7min. The cornstarch thickened it really well, and the cumin was not overwhelming. The spice was barely medium - you could omit or cut back the cayenne if you are sensitive to heat.

My Mother-in-Law's Cheese Sauce...ssshh Don't Tell Her

I doubled the cornstarch b/c the milk was not getting thick. I used a dash of garlic powder and onion powder to save time. It was a nice mild sauce, perfect for veggies.

Vegetable and Tofu Stir-fry

Very good. I doubled the sauce and used the veggies I had on hand - bok choy, pea pods, asparagus, bell peppers. I probably used 2x the ginger and threw 3 whole cloves of garlic in so it wouldn't burn.

Flounder Florentine

I made quite a few changes. I used fresh kale, because I had it on hand. I sauteed an onion and the kale in olive oil, then added a few cloves of garlic to that. I made the roux with 3T butter and 3T flour, then added 2% milk (again, had it on hand). Followed recipe for salt, pepper, and nutmeg. I added a lot more parmesan - probably almost a cup total. I mixed half w/ the kale, put the fish on that, and put the rest of the sauce on top of that. Baked at 350 for 20min. Turned out really good! I'm going to mix the leftovers with some small pasta and make a pasta bake of sorts.

Turkey Pot Pie

I used the recipe below, but used turkey stock instead of bullion, half and half instead of milk, added my leftover gravy (maybe 2/3c), added sage and rosemary, and used store-bought crust b/c I suck at that. I prebaked the bottom crust for 5min.

Maryland Crab Cakes I

I made a couple changes: 1. used a hamburger bun instead of bread b/c it's all I had 2. used 1 tsp of old bay instead of 1 T 3. used olive oil rather than butter to fry 4. chilled the patties for 30 minutes before cooking 5. baked in 350 degree oven for 10 minutes after frying for 4 min on each side I didn't have any problems w/ the patties coming apart... I had chilled them based on other reviews, so maybe that was it. My husband said this one was a keeper!

Old Time Chicken Divan

We did a little modification... we used whole chicken breasts, lightly floured and browned on both sides with butter. We also only par-steamed the broccoli - 2min in the microwave, before putting it all together. It made it less of a "casserole" and more of a full meal. delicious sauce!
