Amish Breakfast Casserole

Reviewed: Feb. 3, 2012
I have made this at least a half dozen times. Although I don't personally like eggs, there is never any left and folks go back for seconds and always request the recipe. I also add black pepper and sometimes add green pepper, if I have it on hand.

Roasted Potatoes with Rosemary

Reviewed: Jan. 9, 2012
I used as little less oil since I am on WW. I made a roast in my slow cooker but didn't have enough room to put potatoes and carrots in. So, I made these on the side (with the addition of carrots) and we used the gravy from the roast over the potatoes and carrots. Very tasty!

Kosher Salt Encrusted Prime Rib Roast

Reviewed: Dec. 26, 2011
FABULOUS, I'll never make prime rib another way again! My roast was 5.08 lbs and took approx. 5 hours at 210F. Like others had suggested, I made a paste with some water to make my salt crust. The salt just breaks off in chunks after resting. I allowed my roast to rest sitting in my microwave.

5 stars if the layers didn't separate. I should have followed the suggestions by others and not let the first layer set.

I chopped the onion fine and did not use the blender. Thanks for the recipe.

These were delicious! They heated very nicely covered in the oven. They were nice and creamy and not dried out.

Yummy Sweet Potato Casserole

Reviewed: Nov. 25, 2011
I doubled the topping as some had suggested. This is wonderful! This was my first time making anything with sweet potatoes. Next time I may try baking them and mashing as some had suggested.

Make-Ahead Turkey Gravy

Reviewed: Nov. 24, 2011
...and I thought that I made really good turkey gravy... This is wonderful, but very rich! I made it a little less rich by adding some more chicken broth and tightened it back up. When I use a thickener without a roux, I simmer for 5 minutes, stirring constantly. I initially made this because my hubby is deep frying a turkey this year and I wanted gravy, but I think I will always make my gravy this way now. Thanks for the recipe!

Brown Sugar Meatloaf

Reviewed: Nov. 24, 2011
Like other reviewers, I put the brown sugar and ketchup on the top. I made this in muffin tins with 96/4 beef, low fat milk and only 1 egg. I like my meatloaf crispy on top so I baked the muffin tins at 350 for 1 hour. GREAT fun and tasty!

Easy Pleasy Mac N Cheesy - US Navy Style

This was very good. I doubled the recipe and put some in sprayed muffin tins. The only adjustments that I made were to reduce the fat by using 2% velveeta, low fat sour cream and low fat milk. Was very creamy!

Easy, addictive. Would be fun to make with little kids. Let them put the pretzel and chocolates on the cookie sheet.

Bangin' Smokey Beef Brisket

Reviewed: Nov. 21, 2011
Wonderful! I was only able to marinate for 20 hours, I cut the fat cap off before baking, which was risky because it could have ended up being tough. Was fall apart tender! I sliced some Hawaiian rolls in half, placed the meat and onion on, drizzled on our favorite BBQ sauce and placed the tops back on. Going into regular roation at our house. Thanks for the recipe!

Slow Cooker Buffalo Chicken Sandwiches

Reviewed: Nov. 15, 2011
I made mine super spicy for my lunches for this week! To cut back on the fat, I did not add the butter. I used a 12oz. bottle of hot buffalo wing sauce, since that is all I had on hand. Through this in my little 2qt. slow cooker and let her cook all day. :D

I wish I had grilled these instead of baking. They would have browned up nicely on the grill. They were quite pale coming out of the oven.

Hot Italian Sausage

Reviewed: Oct. 23, 2011
Scaled recipe back to 4 servings to make one pound. It wasn't hot and spicy, which is what I wanted and knocked it down 1 star, but it is a GREAT regular Italian Sausage recipe with 5 stars. I fried it in bulk after allowing to sit for 24 hours to add to my homemade pizza chili. Thank you for the recipe.

Slow Cooker Pork Chops II

These were lovely, falling apart. Nice change from using a Cream of soup base. For the leftovers, I did chop the meat and add in a can of Cream of Celery soup and just a smidge of milk. Served over noodles. Was even great as leftovers.

Gravy Baked Pork Chops

Reviewed: Sep. 20, 2011
Easy weeknight meal! Pork chops came out very tender. Thanks for the recipe! I am on WW, so I altered the recipe just a smidge to lower the fat. I used 1 tsp. of light olive oil to fry and ultra-trimmed the center cut pork chops of all visible fat, used 2% milk and 98% fat free cream of mushroom soup. I also made these in a 10" stainless steel oven-proofskillet and put it directly into the oven. One pot! I also made a side of oven roasted potatoes and a steamed veggie. We put the gravy on everything.
