I cook a lot by memory of my favorite recipes. I'm one of those that says, 'you just add a bit of xxx'. Never knowing the EXACT right amount...LOL
My cooking tragedies
I totally suck at grilling. I just can't seem to get it right. Maybe I need Grilling 101 for my Weber charcoal grill.

Takeout Burritos
So good! I used the leftover chicken from Lime-Chicken-Soft-Tacos from this site. I doubled this recipe to freeze leftovers. I added a cup of frozen corn to the chicken/rice mixture. I used 2 cans of drained/seasoned black beans. I set up an assembly line, tortillas, then 1/8 cup black beans, then 1/4 cup of the rice mixture. I wrapped the ones to freeze in foil.

Kosher Salt Encrusted Prime Rib Roast
FABULOUS, I'll never make prime rib another way again! My roast was 5.08 lbs and took approx. 5 hours at 210F. Like others had suggested, I made a paste with some water to make my salt crust. The salt just breaks off in chunks after resting. I allowed my roast to rest sitting in my microwave.

5 stars if the layers didn't separate. I should have followed the suggestions by others and not let the first layer set.
