Mexican Pizza I

Way better than the Taco Bells Mexican Pizza! I used 8 tortillas instead. I put the beans, meat, cheese, and more beans in between two tortillas, then baked them for about 12 minutes, then added cheese atop of that and baked for another 5 minutes, just until the cheese on top of the top tortilla is melted. Then, I put the tomatoes, olives, Jalepenos(instead of the can of green chiles), sour cream, and green onoins on top. It was very very good.

Mexican Chicken I

This was ABSOLUTELY DELICIOUS! Yummy!! Don't bake for an hour and a half though. That's way too long. I baked for 35 minutes, but I only made 2 servings. I suggest 45 minutes for more servings. If you you bake too long, I'm afraid the beans will burn. I topped with some chopped green onions and served it with sour cream and over rice. This was a really good recipe. The chicken was nice and moist, and it's really a nice low-calorie recipe. I will for sure make again. Thanks.

Marinara Sauce

Very very good. I served it with spaghetti. The reason I gave it a five is b/c it had so much flavor. I added some garlic powder and I left out the half cup of water. I thought it would make it to runny. Mine turned out great. I froze the leftovers for next time. Great recipe.

Grilled Shrimp and Chicken Pasta

This was GREAT! I did have some modifications. I saw that most reviewers were not happy with the sauce b/c it was too thin. I added about a table spoon and a half of corn starch to thicken it up. It really helped. Be sure to stir it well thought to get out all the chunks. I also doubled the amount of cayenne pepper b/c I really like spice food. It made the dish have a nice zing to it. If you've ever had spicy chicken and shrimp at a restaurant...this tastes just like it. I also chopped up the chicken as recommended by other reviewers. I didn't want to go through the hassle of grilling the shrimp so I cooked it along with my cubed chicken and it turned out great like that. It gives the shrimp a chance to cook in the wine and olive oil to soak up the flavors too. This is a great meal for the whole family. Enjoy!

Eggnog Pancakes

They were okay. They were way too thick. I added milk to make them more runny and then they turned out good. If it wasn't for the milk I added they would turn out burnt on the outside and runny on the inside b/c they were too thick. I think a 3/4 cup of milk should be added to the recipe to make better pancakes.

Basic Pizza Crust

It was great. I used regular all-purpose flour instead of cornmill since that was alll I had. I had to use more than 2 1/2 cups of flour though b/c the dough was too sticky.

I served the dish over rice...excellent! I didn't use cod figh though..I used orange roughy. It was the closest thing to cod I could find. It was great!

King Ranch Chicken Casserole III

Absolutely delicious. I haven't had king ranch chicken in a while..this was just like I remembered it. People complain about it being soupy, but I just let it cool down for like 30 minutes after I took it out of the oven and it turned out good. I think the answer to the soupy question is not using foil and letting it set after baking it. Do not use foil while baking it or when cooling it.

Chicken with Rice (Arroz con Pollo)

Very very very good! There is this Cuban style place here in Corpus Christi called Havana Club and they serve tapas. Well, the food there is amazing and prepared by this awesome chef. They have arroz con pollo as one of the tapas, and it is my favorite thing to get there. It is so full of flavor like authentic arroz con pollo. Well, I found this recipe hoping to make it myself, and suprisingly it was very similar. Same great flavor and everything, except for this one had peas. I think the peas add a nice touch though. This is a very good recipe to make authentic arroz con pollo, so I suggest everyone give it a shot. You won't be disappointed.

Scalloped Potatoes and Pork Chops

These were okay! I read the reviews before I made them and everyone seemed to recommend microwaving potatoes before-hand. I microwaved my potatoes for 5 minutes before placing them in the baking dish, and they still turned out under-cooked. I would recommend microwaving the potatoes for maybe 10 minutes. I would mix the milk, onions, and potatoes very well first and then put the cheese on top. Bake covered. The recipe doesn't specify, but that would be best. Good luck.

Spicy Chicken Thai Noodle Soup

Very good and spicy. I didn't have a red pepper so I used a green jalapeño pepper instead and it turned out very very good. It had just the right amount of spice. I only cooked my soup for like an hour and a half b/c I only made a serving for 4, but it still turned out good. I seriously don't know why this recipe has so many bad reviews. It's a good recipe.

These weren't very good. They're bland and light, but I guess if you're looking for something like that they would be okay. I would say they are coffee dunking doughnuts b/c that's all I would use them for. They don't have much flavor to eat by themselves.

very very good. i love this recipe..so easy! i took others advice and only did half a cup of broth but i added about 1/4 cup of white wine to the bell peppers while cooking to give it a sweeter flavor. so good!

Hawaiian Chicken

This is one of the best dishes I have tried from this website and I've tried a lot!!! Why aren't there that many ratings or reviews???? I can not believe how good it turned out. I was thinking the worst when I first started making it. All the ingredients sounded weird together and I thought maybe the chicken would turn out dry since it stays in the oven for so long, but boy was I wrong!!! This is definatley one of the best meals I've eaten. I would strongly suggest serving this with white rice or even over the rice. Mmm..I already want another serving!

Pork Chile Rojo (Pulled Pork with Red Chile Sauce)

Sooooo GOOOOOOD! Fantastic! Has good flavor and spice! I just threw everything in the crock pot together...didn't mess with the bag and the water or the dutch oven. I used one big 24 oz jar of salsa so it wasn't the full amount but it still turned out great...and probably better bc the recipe doesn't need anymore liquid. I added some garlic salt and fajita seasoning towards the end. Awesome recipe!

Mediterranean Tilapia

Pretty good. Next time I'll bake the capers, tomatoes, and olives with the tilapia...or maybe pan fry them and then place them atop. I think it would be a lot better like that..probably make it a five. The presentation of the meal is a five though....very colorful.
