Mediterranean Tilapia

Pretty good. Next time I'll bake the capers, tomatoes, and olives with the tilapia...or maybe pan fry them and then place them atop. I think it would be a lot better like that..probably make it a five. The presentation of the meal is a five though....very colorful.

Mexican Chicken I

This was ABSOLUTELY DELICIOUS! Yummy!! Don't bake for an hour and a half though. That's way too long. I baked for 35 minutes, but I only made 2 servings. I suggest 45 minutes for more servings. If you you bake too long, I'm afraid the beans will burn. I topped with some chopped green onions and served it with sour cream and over rice. This was a really good recipe. The chicken was nice and moist, and it's really a nice low-calorie recipe. I will for sure make again. Thanks.

Salsa Biscuit Chicken

This was good, but I recommend adding some salt, chili powder, cilantro, and maybe some taco seasoning. I also added some minced jalapeño peppers to it. This would have been really plain without adding all the stuff I did.

King Ranch Chicken Casserole III

Absolutely delicious. I haven't had king ranch chicken in a while..this was just like I remembered it. People complain about it being soupy, but I just let it cool down for like 30 minutes after I took it out of the oven and it turned out good. I think the answer to the soupy question is not using foil and letting it set after baking it. Do not use foil while baking it or when cooling it.

Fideo (Mexican Spaghetti)

This was great. It's just like I remembered when I was younger. My brother's ex-wife used to make this. I'm surprised there isn't more recipes for fideo on here. I cut the recipe in half and made a serving for three. Instead of the tomatoes I used a can of diced tomatoes with green chilles drained. Even after that, It wasn't spice enough for me, but then again, I love spicy food. Very good, authentic, recipe.

Chicken Chimichangas

This was really good, but I had a couple of problems. My tortillas wouldn't close b/c they were too full. I had a lot of ingredients leftover too. Next time I will have more tortillas so I don't have to overstuff the tortillas and so I don't have to throw away the left over stuffing that wouldn't fit in the tortillas. I ended up baking them b/c they were just too full to fry. So, if you're gonna make this either cut the ingredients down or use more tortillas.

Soft Christmas Cookies

This is a simple cut-out cookie recipe if that's what your looking for. I actually made them for St. Patrick's Day instead of Christmas and made little clovers. They turned out great. After letting it sit in the fridge, be prepared to flour up the counter a whole bunch b/c the dough comes out really sticky. With a little flour it's fine though.

Restaurant-Style Potato Salad

I made this for a cook-out, and it totally stole the show. Everyone loved it. I left out the pimentos b/c I didn't have any. It tasted great without it anyways.

Spicy Chicken Thai Noodle Soup

Very good and spicy. I didn't have a red pepper so I used a green jalapeño pepper instead and it turned out very very good. It had just the right amount of spice. I only cooked my soup for like an hour and a half b/c I only made a serving for 4, but it still turned out good. I seriously don't know why this recipe has so many bad reviews. It's a good recipe.

Very good. I like the thought of eating an authentic Columbian dish. Very good, and interesting textures. Maybe a little plain though, but I think that may be the way Columbian food is supposed to taste.

Chicken with Rice (Arroz con Pollo)

Very very very good! There is this Cuban style place here in Corpus Christi called Havana Club and they serve tapas. Well, the food there is amazing and prepared by this awesome chef. They have arroz con pollo as one of the tapas, and it is my favorite thing to get there. It is so full of flavor like authentic arroz con pollo. Well, I found this recipe hoping to make it myself, and suprisingly it was very similar. Same great flavor and everything, except for this one had peas. I think the peas add a nice touch though. This is a very good recipe to make authentic arroz con pollo, so I suggest everyone give it a shot. You won't be disappointed.
