Jenny's Cuban-Style Slow-Cooker Chicken Fricassee

Reviewed: Oct. 5, 2008
great recipe..but I suggest not using chicken on a bone. The meat became so tender it fell right off the bones and the bones became brittle so it was hard to pick them out. Very good though...I dont know why people complained that the potatoes weren't cooking all the way...my potatoes were extremely moist. I doubled the recipe and added a can of diced tomatoes to the recipe as others suggested but when it was done there was so much juice that I think it would have been fine without it. I didnt know what the other reviewers were talking about when they suggested sofrita or goya whatever...so I just added fajita seasoning to it through out the cooking process...only stirred it once about half through and cooked it for the whole 8 hours.

Grilled Shrimp and Chicken Pasta

Reviewed: Apr. 26, 2007
This was GREAT! I did have some modifications. I saw that most reviewers were not happy with the sauce b/c it was too thin. I added about a table spoon and a half of corn starch to thicken it up. It really helped. Be sure to stir it well thought to get out all the chunks. I also doubled the amount of cayenne pepper b/c I really like spice food. It made the dish have a nice zing to it. If you've ever had spicy chicken and shrimp at a restaurant...this tastes just like it. I also chopped up the chicken as recommended by other reviewers. I didn't want to go through the hassle of grilling the shrimp so I cooked it along with my cubed chicken and it turned out great like that. It gives the shrimp a chance to cook in the wine and olive oil to soak up the flavors too. This is a great meal for the whole family. Enjoy!

Naan

Reviewed: Apr. 8, 2007
Just like the restaurants! Very good. I reccomend making them if your going to make an Indian dish. It just makes everything right. I have kind of a funny story that goes along with this. When I was making this, I asked my boyfriend to help, because I was making the Indian Chicken curry on this website, and I thought I could trust him to atleast roll out the dough. Well, I told him to flour the counter first before he rolled them out, so he did so. And he made a couple and we were trying them, and they tasted really sweet. I was like hmm this is really unusual, but really good. Turns out he floured the counter with powdered sugar! I was dying laughing! I guess it was my fault for even letting him help. haha. So anyways, we made half the batch with powdered sugar and half the bath with flour, but they still turned out great. Very good recipe!

Indian Chicken Curry II

This was a really good, authentic Indian dish. We don't have an Indian food restaurant here in Corpus, and Indian is my favorite food, so it's nice to find some good recipes. Thanks.

This was good, but I would add more sauce on top because it was very rich. Good meal though.

Jalapeno Poppers I

Reviewed: Apr. 2, 2007
These were very bland and just so hard to make. I will not make these again. I made them for a party and nobody ate them. The plastic wrap stayed on them the entire time...not even one was eaten. I guess they didn't look very good either. It was hard to keep the crushed corn flakes on them..it was just a big mess.

Classic Butter Cookies I

Reviewed: Apr. 2, 2007
This recipe is great for cut out cookies. I needed to make some fast cookies for a basketball game party and I have another recipe from this website (sof christmas cookies I think it is) and those are really really good, but it takes like three hours to make them. I tried these and these are really good as well, and it doesn't take as long.

Cheesy Stuffed Shells

Reviewed: Mar. 29, 2007
I think this meal was excellent. I loved it. It was the right amount of everything. This is also my first time making stuffed shells, as a few other reviewers, and I really liked it. I was hesitant at first b/c I was afraid the shells would fall apart and not be able to hold the stuffing, but I was wrong. Everything went fine and I think it only took like like 45 minutes to make this meal..not an hour like the recipe says. Great meal idea.

Mexican Pizza I

Reviewed: Mar. 25, 2007
Way better than the Taco Bells Mexican Pizza! I used 8 tortillas instead. I put the beans, meat, cheese, and more beans in between two tortillas, then baked them for about 12 minutes, then added cheese atop of that and baked for another 5 minutes, just until the cheese on top of the top tortilla is melted. Then, I put the tomatoes, olives, Jalepenos(instead of the can of green chiles), sour cream, and green onoins on top. It was very very good.

Souvlaki

Reviewed: Mar. 23, 2007
I made this the other night and it was great. I baked it instead of grilling it b/c I live in an apartment. It turned out so moist. I laid the skewers down in a baking dish, poured some of the marinade at the bottom, and then covered it with foil. MMM...It made it very moist and tasty.
