Mom's Italian Beef Barley Soup

Just wonderful! I did add a bit of red wine,fresh thyme, bay leaf, minced garlic, and carrots to the beef broth. I also browned the beef before I put everything into the crockpot. Thank You!

Balsamic Glazed Carrots

Wow...so simple & flavorful! My tweaks: par-steamed (2 min) then sauteed in a little butter and olive oil...maybe another 2-3 minutes...finished w/equal amounts of brown sugar & good balsamic. Exquisite! Thank You!

Holiday Brie en Croute

I've made this too many times to count in many different ways and my favorite is using apricot jam or preserves, Craisins (you don't need to soak them...use them as they are!) lightly toasted sliced almonds and away you go! Excellent every time and travels well too.

Spruced Up Mashed Potatoes

Loved this! I'm always looking for new ways to gussy up mashed potatoes and this was pure fun. I had to reduce the serving amount so I simply used 2 large potatoes, a large handful of baby carrots, chopped, and a third of a head of cauliflower with 1 large clove of garlic chopped. I also used heavy cream (b/c I had some on hand) or my norm, 2% milk w/ the butter. Just fantastic...thx!

Sweet and Sour Meatballs II

Orange Rice

I loved this rice!! I used 1c. jasmine rice and decreased the oj to 1c and added 3/4c ch. broth w/ the zest. Covered and simmered 15 min. Folded in the manderins then sprinkled toasted slivered almonds and sliced green onions on top. Fantastic. Thank you so much!!

Sus' Cat Scratch Attack Casserole

Found this recipe accidentally, but couldn't resist the name :) Figured what the heck, made it one night and wow! easy and a nice change from elbows or pasta. The jalapeno is a great enhancer that I simply would never have thought of, but thanks!! (Unfortunately, my husband wouldn't let me even allow our felines to taste test!)

Coconut Ice Cream

Fantastic!!! I made the creamy coconut ice cream base then added in 1/2c. drained crushed pineapple and a couple of handfuls (1/2c. or so) toasted coconut the last 10 minutes. Did I mention the word "FANTASTIC?"!!! Thanks!

Crunchy Chicken Casserole

I sauteed the celery, onions, and a little carrot w/poultry seasoning first then followed as directed. Liked the results, but as another reviewer mentioned a strong mayo taste comes across shortly after cooling and forget the leftovers...the mayo taste is strange. My husband (who eats everything!) wouldn't touch it.

BBQ Potatoes with Green Onions

I only used 2 very large potatoes, same amount of onions. Really great flavor and oh so simple! Definitely spray the foil w/Pam & dot w/extra butter. The onions meld with the butter so nicely. Thank you for a great addition to the potato family!!

This was FABULOUS! Used the lemongrass in a tube (So much easier!) I tweaked it based on our tastes...left out the coriander, substituted fresh, chopped spinach to drop in at the end...substituted chicken broth for the water, added halved baby carrots and finally parsley in place of the stronger cilantro. Even with my changes it still tastes like the soup at our favorite Thai place. In fact, my better half says he likes this one more! So, thank you Adrienne!!

Cream Cheese Penguins

Desperately wanted to make these for our large family Christmas gathering ( I know, I know, this is late!) but woke up REALLY late and my husband & I have a lot of driving to do. Long story short, I open the fridge to get milk out for my coffee and POW!!!! Knock me over w/ a feather!! Standing as cute as could be are about 50 gorgeous penguins!! My husband was so enamored with the idea, he decided to make them and let me sleep in! In closing, they were a HUGE HIT!!!!! Thank you.

Sesame Beef

Truly wonderful & easy! I used 1 tsp sesame oil w/olive oil, all brown sugar & tamari sauce instead of soy sauce. Added fresh asparagus...yum! Made a small beef broth slurry w/cornstarch to add at the end. I served over jasmine rice and sprinkled w/sesame seeds. Very elegant looking & delicious. Thanks for the post.

Kona Chicken

Yummy, yummy, yummy!! I did mine (drumsticks & boneless,skinless thighs) in a 400 degree oven for 1 hour covered. I drained some of the sauce into a pot; cooked chicken (basted w/honey) for 20 min. uncovered. Thickened remaining sauce with cornstarch. Perfect!!! Thank You!
