Peach Cobbler VI

Followed others advice & used 8x8 pyrex...added nutmeg and cinnamon. Looked fabulous, only problem was the center just didn't want to cook! Loved the "frame" though!

Beer and Brown Sugar Steak Marinade

Reviewed: Aug. 29, 2006
Hubby & I loved this! Only change I made (due to the Guinness disappearing!) was to use an IPA (Aprihops) beer and then doubled the marinade as suggested, but not the teryaki sauce. Made oven fries to go with...fantastic Craig, thanks!

Roasted Garlic Peppercorn Sauce

Reviewed: Aug. 29, 2006
Lessened the pepper...cooked the butter w/the flour first to omit that "cardboard" taste and used more milk, based on reviews...still way too spicy and glutenous a sauce. Sorry.

Roasted Corn and Basmati Rice Salad

Reviewed: Aug. 29, 2006
This is an excellent side! The only thing I disagree with is the chilling part. It is so good at room temp! Thanks!

Apple Dumplings I

Reviewed: Sep. 3, 2006
Nice, rustic and simple dessert. I followed others advice and combined sugars (1/2c ea)& added nutmeg. Baked dry 10 min., flipped, baked 10 more, then added sauce (bake 15 min). Overall, very good, but the sauce turned what I assumed would be crispy kind of mushy. Will try again doing sauce on stovetop and pour over or serve with at end.

Barbecue Beef Cups

Fun, simple, and easy to make!! A little dry...feels like it needs an au jus, sour cream or something to dip it in b/c of the bread I guess. Thx!

Yum! My 1st attempt at fried chicken & this was fabulous! I added onion powder, extra garlic powder, paprika, salt, pepper, and just about anything else that appealed to me at the moment. Messy, but WOW!!!!!

Easy and elegant! Nice twist on a perfect comfort food. Used a merlot, needed salt, I felt, but that could be me. Loved it anyway! Thank you!

Kona Chicken

Reviewed: Sep. 26, 2006
Yummy, yummy, yummy!! I did mine (drumsticks & boneless, skinless thighs) in a 400 degree oven for 1 hour covered. I drained some of the sauce into a pot; cooked chicken (basted w/honey) for 20 min. uncovered. Thickened remaining sauce with cornstarch. Perfect!!! Thank You!

Ranch Crispy Chicken

Liked the simplicity & flavor! I listened to others and only used 1 pkt ranch w/1 cup bread crumbs. Dipped in egg, bread crumb mixture and sauteed in olive oil. Nice change! Thanks!

Smothered Filet Mignon

Reviewed: Sep. 26, 2006
Yes!! Fantastic! Great marinade...only change (my choice) was no blue cheese...don't like it at all. Don't need it...the carmelized onions do a fantastic job of bringing out the flavor of the steak. Thank you!

Porcupines

Fun, easy to do. Hubby and co-workers loved them, however I wasn't as thrilled with the tenderness or flavor even though I played around with the spices/herbs. Will try again. Thanks for the post.

Brown Sugar Meatloaf

Reviewed: Oct. 13, 2006
Yum-my! Made a few changes...used only 1 egg, italian bread crumbs, worcestershire in beef, veal, pork mixture. Mixed the ketchup & sugar together w/about 5 dashes of tabasco and spread it on top. Nothing on bottom. Cooked at 375 for one hour. Perfect! I swear the sweetness permeated throughout the meat ever so subtly! Thank you!!

Angel Hair Pasta with Garlic Shrimp and Broccoli

Reviewed: Oct. 17, 2006
Sorry, I just really didn't like this...I doubled the sauce and increased all the seasonings b/c it just seemed so bland. (Used fresh basil & fresh broccolini, that I steamed) Not for us, I guess.
