Cream of Cauliflower Soup I

We loved this soup...my only tweaks were to not use tarragon (don't care for the flavor) ground some fresh nutmeg instead, and used about 1/2cup or so of the white wine (all I had left!) which I accidentally put in before the flour, so it acted more as a wonderful deglazing ingredient. Then I added the flour. Other than that...yummmmm :) The leftovers were even better the next day,,,you could really taste the flavor of both the leeks and wine. Thanks for the post! Oh, I forgot...did not use the cheese, not necessary.

Sus' Cat Scratch Attack Casserole

Found this recipe accidentally, but couldn't resist the name :) Figured what the heck, made it one night and wow! easy and a nice change from elbows or pasta. The jalapeno is a great enhancer that I simply would never have thought of, but thanks!! (Unfortunately, my husband wouldn't let me even allow our felines to taste test!)

Holiday Brie en Croute

I've made this too many times to count in many different ways and my favorite is using apricot jam or preserves, Craisins (you don't need to soak them...use them as they are!) lightly toasted sliced almonds and away you go! Excellent every time and travels well too.

BBQ Potatoes with Green Onions

I only used 2 very large potatoes, same amount of onions. Really great flavor and oh so simple! Definitely spray the foil w/Pam & dot w/extra butter. The onions meld with the butter so nicely. Thank you for a great addition to the potato family!!

Shrimp and Gravy

Excellent quick recipe for a busy night! I used beef broth and garlic powder instead to make more of a sauce for the grits I paired it with and added a couple of dashes of creole seosoning and tabasco to boost the spice. Thx!

Cinnamon Ice Cream

Coconut Ice Cream

Fantastic!!! I made the creamy coconut ice cream base then added in 1/2c. drained crushed pineapple and a couple of handfuls (1/2c. or so) toasted coconut the last 10 minutes. Did I mention the word "FANTASTIC?"!!! Thanks!

Spruced Up Mashed Potatoes

Loved this! I'm always looking for new ways to gussy up mashed potatoes and this was pure fun. I had to reduce the serving amount so I simply used 2 large potatoes, a large handful of baby carrots, chopped, and a third of a head of cauliflower with 1 large clove of garlic chopped. I also used heavy cream (b/c I had some on hand) or my norm, 2% milk w/ the butter. Just fantastic...thx!

Beef Tenderloin With Roasted Shallots

Beautiful sauce, lovely recipe!! Just prepared with individual filets on stovetop. Served w/ simple s/p roasted red potatoes and roasted asparagus. Yum! Thank you for posting! Oh yeah, I used pancetta instead of bacon.

Adrienne's Tom Ka Gai

This was FABULOUS! Used the lemongrass in a tube (So much easier!) I tweaked it based on our tastes...left out the coriander, substituted fresh, chopped spinach to drop in at the end...substituted chicken broth for the water, added halved baby carrots and finally parsley in place of the stronger cilantro. Even with my changes it still tastes like the soup at our favorite Thai place. In fact, my better half says he likes this one more! So, thank you Adrienne!!
