Stuffed Pepper Soup IV

I love this soup but I gave it 3 1/2 stars because no way does sage go in stuffed peppers. Great base recipe for the ratios. I added garlic, more peppers included a poblano for a little heat, and chopped fresh tomatoes. Instead of the sage, I used a dash of italian seasoning. If you don't have time to cook your rice separately, use the frozen pre-cooked rice.

Balsamic Vinaigrette

Great basic recipe! I only took away 1/2 a star because I think that it was slightly heavy on the vinegar. I added some honey for balance.

Grilled Marinated Shrimp

Perfect recipe! I did use another reviewer's suggestion and used ketchup instead of the tomato paste b/c of the small quantity. I made them again and used a squirt of honey too. Next time, I'm going to at least double the recipe so using the paste won't be a problem. Yum!

Irish Soda Bread

Super easy and a taste sensation! Love it! Lightly sweet and MOIST. I used golden raisins and greek yogurt and didn't dust with flour. If you just slightly under bake this, it stays moister. I recommend NOT kneading the dough because it's just too sticky. Instead I used a silicon spatula and folded the ingredients into each other. ( FYI - the buttermilk QTY is just under a pint.)

Italian Love Cake

Fantastic! Can't believe how good this is and so EASY! I used Grande brand Sopraffina super fine style ricotta and dark choc fudge cake mix. I took the advice of other reviewers and only used 3 eggs in the cheese mixture. The frosting is delicious but the cake is yummy without it too. FYI --- 2 pints = 4 cups.

This was always one of my favorite things about Girl Scout camp!!! I still enjoy them just as much as an adult. Sometimes we sprinkle chopped peanuts on top too. YUM!

Bubba's Jambalaya

We decided to make this to bring to a Super Bowl party in honor of the Saints making their first appearance. We never made jambalaya before so we did a trial run the week before. Great recipe!! Super easy and delicious! I made my own cajun seasoning blend from this site and used that. I doubled the chicken, used 4 andouille sausage links and did not use any bacon. I cooked the rice separately and added it to avoid the problems with sticking that some reviewers mentioned. This recipe is a keeper for sure! Thanks!!

Pumpkin Turkey Chili

I have a pot on the stove as I type - and it is wonderful! I took the other reviews into consideration and added a can of spicy chili beans for some extra kick. I also added 1 cup chicken stock to make it a little thinner, a can of Ro-tel instead of the tomatoes, 1 T fresh apple cider and 1 T apple cider vinegar, about a cup of corn, and fresh cilantro. As I made it, it's 5 stars for sure. THANK YOU for inspiring me to try this unusual but delicious chili.

Tortilla Soup II

Great recipe! I used a can of Rotel and added black beans and corn. Instead of the flour tortillas I crushed tortilla chips into the bowl when serving. I upped the cilantro to 1/2 of a small bunch.

Baked Zucchini Squares

This is one of my favorite recipes and have been making it for years! I normally use less oil and a little more Bisquick. I add more onions and parmesan cheese. It takes at least 40-45 minutes to get golden brown. We eat if as an appetizer, side dish, breakfast or lunch - great at any temp.

Bacon Wrapped Water Chestnuts II

I loved the addition of mayo to this classic recipe! I recommend at least doubling this recipe if you have a crowd because they always go so fast. I did take other reviewers suggestions and marinated the water chesnuts prior to wrapping them in bacon that I partially cooked on the stove. This gives the chestnuts more flavor and the bacon is extra crispy w/out having to bake them forever. Pre-cooking the bacon made them less greasy too. YUM!

Spicy Bean Salsa

I highly recommend making this recipe AT LEAST two days ahead. It is sooo much better that way! I used just a little Italian dressing, fresh tomato, cilantro and lime juice. I also added chunky garlic pepper sauce for some extra kick. Lime chips are perfect w/ this. The people at work loved it.

This is fantastic! The flavors of all the veggies go so well together. It's very savory and satisfying. Make sure you cut up the kale in small pieces for easier eating.
