No Bake Lime Mousse Torte

This was delicious! I made this for my husband's birthday, particularly because it is waaaay toooooo hot to turn the oven on right now in Southern CA. The texture is light, the ginger snap crust is far better than the typical graham cracker crust, the tanginess is refreshing, and the cheesecake has already disappeared from the fridge. I am very picky about desserts, having worked as a pro baker. THIS IS VERY GOOD!

Peach Cobbler I

So good, easy, and inexpensive to make! I just moved into a house with a peach tree, and wanted a recipe that would use only ingredients that I already had in my kitchen. This is it! I am not supposed to eat much sugar, so I substituted 3/4 c of Splenda Blend for the white sugar, whole wheat flour for all-purpose, and wheat bread for white. The recipe may sound a bit odd (bread on peaches?) but, the bread soaks up the butter mixture, brown nicely (even using the Splenda Blend) and develops a mouth-watering buttery sweetness. I made mine with a dash of nutmeg added to the butter mixture. Still absolutely yummy. I think that I will try using a few more peaches next time (perhaps mine were too small) and less of the Splenda Blend (maybe 1/2 c). You must try it!

Lighter Banana Muffins

Compared to full-fat muffins, these are only ok at best (so, 3 stars). But, for fat-free baked goods, these are great! If I make these again, I will add some applesauce as suggested by helpful reviewers here. The changes that I made were adding 1 tsp. vanilla, sub. Splenda Blend for sugar, sub. 1/3 cup whole wheat flour for part of the all-purpose, plus I added 1/2 tsp each of cinnamon and nutmeg. They're tasty and satisfy my craving for baked goods. They are quite spongey rather than moist, so applesauce would really improve these.

Sangria! Sangria!

I replaced the triple sec with peach Schnapps. Nothing against the orange liqueur...I just wanted a different fruit liqueur that would complement the orange juice that's already a prominent flavor in this recipe. I also added a sliced peach along with the other fresh fruits. So good!

Vegetarian Gravy

I made this a few years agoon Thanksgiving to go with my homemade Tofurkey. Even the guests who were eating real turkey preferred this vegetarian gravy to the broth-based gravy. It is SO good!!!!

Peanut Butter Frozen Yogurt Pops (aka "Peter Pan Yogacicles")

My mum used to make these when I was a kid. I only JUST found the recipe, it had been M.I.A. for 20 years! These are yummy, creamy, and tangy frozen yogurt pops that you don't have to feel TOTALLY guilty about eating. The yogurt and milk pack plenty of calcium, the peanut butter adds protein, and if made with strawberries, there's a decent amount of Vitamins. YUMMMMMMm!
