Best Ever Popcorn Balls

super easy. Here is a Holiday suggestion. I made these for a Halloween party. I only had Chocolate marshmallows (monster poo's) - the color is a little bit gray....so they made awesome looking Monster Brains. Wrapped them in baggies- kids are going LOVE them.

Easy Shake and Bake Chicken

This is basically the same recipe mix as the fried chicken with gravy also on the site. But this is less mess, sorry not less fat (look at the butter). I like them both- both are easy. I don't even really tweak.

Zucchini Brownies

These are really good. Mine did turn out cakey, but I like my brownies that way. Not sure why some get denser ones, maybe it is the flour or baking soda?? The frosting is so good too. Nice, easy, healthy brownies what more could you ask for?

Oatmeal Pancakes II

I am not sure why anyone wouldn't love this pancake....it was fluffy.light and healthier then the a normal pancake. I added fresh bluberries in the batter and they were awesome too....SOOOO GOOOD!!!!!

Fudge

I make this fudge every year and people love it...I get request for it, if they only knew how easy it is...this is the sweet equivalent to the Knorr's spinach dip. what makes it so good is that everything can be added and it tastes awesome. I have tried more "serious Fudge" recipes and I think this one taste the same or just as good. Also baking parchment paper is also good if you don't have foil.

Spinach Brownies

these are really bad....because I almost the entire pan...I couldn't even wait to let them cool. The only change I did was the cheese. I didn't have mozzarella, so I used Young Gouda cheese...a shaper tasting cheese....but I am sure the mozzarella would have had the same effect on me....

Sloppy Joes II

This is a great, simple healthy version of the canned stuff. My 18mo, was licking his plate...really. You can also use this as a base and really take offf with it, BBQ/Thai/Veggie packed Sloppy Joes. For those with picky babies who won't touch peppers, throw it in a Food processor...it will get kinda mushy, but they won't even notice is there...also pureed spinach and/or carrots also hides in there well....Great recipe anyway you make it.

Best Big, Fat, Chewy Chocolate Chip Cookie

LOVE THIS RECIPE..... I made the recipe just as it was, but for one thing. I didn't have choc chips...so took a dark choc bar and milk choc bar instead....pure heaven in the cookie dept.

Eggplant Parmesan II

Can I make it 5+....for the record, I do not really like eggplant....but for some reason I LOVE THIS RECIPE....... and so does my 2 year old....Its so good, easy and healthy....do sweat the eggplant and load it up with cheese....make it with a salad and dinner is done...great even cold....

Spinach Chickpea Curry

This was really good, more a 4 1/2 stars...I didn't have cream spinach, so I used a little vanilla soy milk...what can I say had to make a quick call....thought sweet, liquid should work...and it did. Also added some cauliflower in with the corn.... 15month LOVED the tofu (which I fried in lowfat cooking spray).... served with basmati - everyone asked for more.... Great Vegeterian dinner for non-vegeterian family. ALSO use real spinach....fill up your sink with cold water wash it that way, salad spin it and just chop keep the stems..... fresh spinach is so much better then frozen.

Moroccan Salmon Cakes with Garlic Mayonnaise

these are really good, I didn't have any spinach, so I used zucchini instead... turned out really good, the husband and baby LOVED them.... here is my trick for the zuch. Shred it and squeeze out all of the water before mixing it. I let the mixture sit in the fridge for the afternoon, and then resqueezed before shaping into a patty. A really good substiute if you are missing or do not like spinach. The Mayo was awesome. Footnote as of 3/11/08...I have done it with spinach...and I think I like the Zuch way better... it holds together better...Spinach taste good, but crumbled.

Beth's Spicy Oatmeal Raisin Cookies

great oatmeal cookie. I did make a few changes. First used splenda instead of white sugar to cut the sugar amount (used the brown sugar as stated). I also accidently used nutmeg (thought I grabbed cinnemon)- still added cinemon and it was good. Also had no raisins only cran mix (nuts/cran/choc) and the cookies were still good. I only baked for 8 minutes. I think this is a cookie that you really can't screw up. Added Notes... I love these cookies make them all the time as the recipe states, but wanted to try to slim down the fat and sugar...and it works pretty well. reduced the butter to about 1/3 cup and 1/2 cup+ appelsauce. Did a loose cup of brown suger with two big spoonfuls of honey. Added some ground ginger and nutmeg to compensate for the less sugar..they are great. The cookies should cook 10 minutes. They are obviously not the original DELISH cookies, but for the kids they are GREAT..

Garlic Prime Rib

this was so good and so easy. I had a really small piece of meat (1 1/2lb) just the two of us. I cut the recipe in half, and only needed to cook the meat 45 min. I was really impressed at the meat when I sliced it up- perfect pink.

Pumpkin Cake III

very good, very easy, very rich. I cut the oil by adding the applesauce ( this does cut the fat and keep the cake moist), I used the cream cheese frosting II like other reviewers, and though it was very good- I think it was to rich for this cake. I think next time I will do a simple suger glaze or even fresh whipped cream. My hubby prefered his plan. But you judge for yourself you won't regret it.

Pumpkin Coconut Curry

I really liked this curry, but I must admit I didn't follow exactly. I didn't have chicken, I used pork. I also added cauliflower and green beans to up the veg. I also added a little curry powder and used chili paste,( as I didn't have flakes) but it was great. Maybe not a true Thai curry, but good for my taste. I can't wait to try it with the chicken next time.

Delicious Ham and Potato Soup

I love this soup! It the everything and the kitchen soup kind of soup. I have doubled it, tripeled it, put corn in, bacon, brocoli, carrots. You really cannot ruin this soup. And it only gets better the next day.

Fried Chicken with Creamy Gravy

This is really a great recipe. Like so many others I upped the spices a little. I also mainated the chicken in salt water for a few hours. Don't crowd the chicken if you have to use two pans, other wise you may have bald chicken legs like me..... the gravy is also to die for. My Dutch husband loves my southern cookin.
