Slow Cooker Chicken and Dumplings

Definitely season your meat. I used poultry seasoning, salt, pepper, celery flakes and a dash of tony's. If you don't season it, it has no flavor. I only used one 12oz can of biscuits. I cut each biscuit into 4 pieces. Total cooking time was 5 hours, 4 hours for chicken and 1 hour for biscuits/dumplings. I do think next time I will use bone in chicken breast so the chicken will be more tender and not cook so fast. If I do boneless, I will cut back on the chicken cooking time since you are cooking on high.

Leftover Turkey Pot Pie

Excellent way to use up that left over turkey! I did make a couple of modifications. I used 2 cups of turkey, 1 can Cream of Chicken & Mushroom soup in lieu of mushroom soup and added 1/4 tsp of thyme and 1/4 tsp of black pepper. Kept milk the same. Great taste and very creamy. Will def make this again.

Turkey Pot Pie III

Excellent way to use up that left over turkey! I did make modifications. I used 2 cups of turkey, 1 can Cream of Chicken & Mushroom soup in lieu of mushroom soup and added 1/4 tsp of thyme and 1/4 tsp of black pepper. Kept milk the same. Baked @ 375 degrees, on lower rack, for 50-60 minutes or until crust is golden brown. Great taste and very creamy. Will def make this again.

Taco Soup III

Very hearty and spicy. Substituted ground turkey for beef, used one can of hot rotel and one can of mild rotel. White hominy is delicious, prefer it over corn. Omitted the ranch dressing mix but topped each serving with a dollop of sour cream. Added avocado chunks too. Will definitely make this again!

Southern Peach Cobbler

Very easy to make and great taste. Modifications I made to the batter: Add 2 tsp cinnamon, Add 2 tsp vanilla, Substituted 1/2 cup Splenda blend (which is 1/2 Splenda and 1/2 sugar) for the 1 cup of sugar Definitely a keeper and I plan on making it again.

My Crab Cakes

Made a few adjustments and followed Top Reviewer (Lucky/Sami)'s recommendations: 2 6oz. cans crabmeat 2 eggs 1 sleeve of ritz crackers 1/2 tsp. Old Bay seasonings All other ingredients, I kept the same. I did not saute my green onions in oil. Next time I make these, I will not coat the patties in bread crumbs as using one whole sleeve or more of Ritz crackers gives it the coating it needs to be pan fried. These were good!

Cheesecake Brownies

Good, rich. Hard to mess up a box mix! Disappointed about the cream cheese mixture. Next time I'll double it so it will be mixed into the entire batter as opposed to just the top. Had to cook longer than the box directions called for.

Pumpkin Cake III

10/31/09: I made this cake again for our Halloween work party and it was a big hit. This time I presented it like a pumpkin or jack-o-lantern by making 2 bundt cakes, slightly cutting the bottoms of each to make them flat and then placing them together. I used an ice cream cone for the stem, just added green food coloring in the frosting. Had 3 people ask me if I would make this cake for their Thanksgiving celebrations! ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 10/10/2009: This cake was so good! I substituted by cutting the oil, as others suggested, by instead using 3/4 cup oil and 1/2 cup cinnamon applesauce and it came out so moist! I used the "Cream Cheese Frosting II" from this site although I had a slice before it was frosted and it was so good w/o it. Will be making it again for Thanksgiving! Baked in a bundt pan and cooking time was 55 minutes.

Baked Garlic Parmesan Chicken

Followed the recipe exactly as written. Rating 2 stars because the chicken had no flavor whatsoever. Have a recipe very similar to this one from Paula Deen called Oven Fried Chicken. Will definitely stick with that one because of flavor.

Strawberry Angel Food Dessert

Made this as a "thank you" for a friend. She loved it! It was simple to make and tasted wonderful! The only changes I made: substituted Splenda for the sugar and used sugar free cool whip. I also made my own strawberry glaze by taking frozen strawberries and pureeing them in the blender. Will definitely make it again.

Macaroni Tuna Casserole

Made this for us on a weeknight, it was simple yet delicious! Great flavor and I think that was due to the fact that I made my own homemade mac and cheese in lieu of using a box. Will definitely make this again!

Grilled Corn on the Cob

Very good! I removed the silk, soaked the corn in water for about an hour. Butter and seasoned, pulled the husk back over the corn then wrapped in foil. Cooked for 30 minutes. Very tender and moist! Great summer grilling!
