About this Cook
I am married with 2 grown boys. I live in sierra mountains. No fast food restaurants up here. My boys have learned to eat fresh and healthy. I am a wine conniseur so many dishes I cook will go well with a strong cabernet.
My cooking triumphs
Pie making. One year friends took us Apple picking. I was not a pie maker. I ended up with bushels of apples. Learning to make everything from traditional apple pie to creating my own sour cream blueberry/apple pie. I made about 20 pies and also had to learn how to freeze and then cook again. My friends now request me to make pies
My cooking tragedies
Pies again. During this learning attempt I made soupy blueberry/apple sour cream. This is before I perfected the recipe so no more soupy pies.

Slow-Cooker Chicken Tortilla Soup
best tip from other reviewers. I season the chicken with extra taco seasoning. Sometimes I do this and then stir fry the chicken strips. I add the chicken to the slow cooker and cook for less time. Then about a half hour before serving i shred the chicken. I am asked for this recipe more than any other recipe I serve to guests

Slow Cooker Mashed Potatoes
best suggestion from other reviewers was to use a clean white towel over the top of crock pot and then put lid on. This worked great and the potatoes were not over starched.

Salmon with Tomatoes
this was excellant. I made this last week and my husband who does not eat much fish has requested it again tonight. A couple notes from last time that I will try tonight. Remove the skin off the salmon before cubing. I would like to find a way to have this flavor with a bit less calories but I do not know enough about healthy cooking to know what I can exchange at this point. Between the butter, oil and parmesan cheese it seems like alot of calories but it is SOOOO GOOD that for tonight, I won't change anything. For those who fear the hot sauce. It is minor splash that enhances the flavor but there is no heat to this dish. I can't eat hot foods so this was perfect for me.
