Mimi's Giant Whole-Wheat Banana-Strawberry Muffins
I liked this recipe, but I didn't love the strawberries. I used fresh, and sprinkled them with sugar to sweeten up before adding them to the recipe. They tasted great in the muffin but had an unappealing texture and look. The base recipe is *delicious* and I think I might try it with some sort of other addition. This made enough for probably 15 muffins and they were very filling! My children LOVED them (much to my pleasure! yay for whole wheat!); they are 2 and 3 years old, so very family friendly! Overall, I'll be keeping this recipe, but adding something other than strawberries.

Good Old Fashioned Pancakes
I used to always buy prepackaged pancake mixes, and yesterday my husband was dying for some pancakes...and mix in the pantry. I found this recipe and the pancakes were fabulous!!! Never again will I waste money on a mix that is inferior to what I can make with ingredients always found in my kitchen! I have always added vanilla to my panacke mixes, and made to exception for this one. As always, it adds such a sweet touch in the background, though I'd say I used at least a tablespoon in mine. My children LOVED these, and now I know that next time it is essential to make a double batch, as this makes sort of a small batch for a family. Excellent recipe, this one will live on in our family!

Perfect Pumpkin Pie
This pie came out perfect, and so delicious. As others have, I tweaked the spices, ommitting nutmeg, and adding ground cloves and pumpkin pie spice along with the cinnamon and ginger. This recipe will go in the permanant box of recipes we use for our family. It was wonderful and I highly reccomend it!
