Classic Macaroni Salad

Mini Cheesecakes III

these are delicious and very easy to make! i doubled the recipe and had enough cream cheese mix for 18 cupcakes but only enough crust mix for 12 so i had to make a little more of that. i used paper liners for the muffin pan and it makes it really easy to eat the cakes (since my crust was a little crumbly). i topped them with some cherry pie filling and they're scrumdiddilyumptious!

Water Chestnuts Wrapped in Bacon

Portobello Penne Pasta Casserole

i made this on two different occasions and we just didn't like it. to me the tastes don't blend well, with all the mozzarella it's too gooey and i don't like the sauce because even with seasoning it lacks flavor. i probably won't make this again.

great crust. loved the texture and how easy it was to work with the dough. it needs some seasoning though we're going to try to mix some garlic and herb in next time and i think it will be great. much better than store bought crust mix!

Grandma's Hash Browns

i'll give this one a 4 because even though i was pretty disappointed with the result my husband LOVED them. my first mistake was to use my food processor to shred the potatoes. instead of shredding they came out pretty mushy. next time i'll do it with the little hand held one. my second mistake was cooking them in a pan. cooking them for 20 minutes on medium heat on the first side was a little too long (although i have a gas range it's sometimes hard to tell the temp) and they were pretty dark. my problem is always the flipping. i can't ever get them to flip nicely it always turns into a big heap of goo. next time i think i will try to make them on the griddle that might be easier. i added a shredded onion and the flavor was awesome. everyone loved them even though they looked kinda icky. i'll give it another whirl and see if i can get it right next time.

Strawberry Vanilla Pancakes

i can't understand how this recipe got any bad reviews... these pancakes are DELICIOUS!!!!!!! i cut the vanilla to 1T and also added a bit of cinnamon as another reviewer suggested. they came out light and fluffy with a perfect taste and texture. i will make these again and again and again and again!

Old-Fashioned Potato Soup

mmm mmm GREAT! i made a few changes and it turned out wonderfully! i used 8 potatoes instead of 6 because a few were on the small side. i also added an extra carrot, 2 stalks of chopped celery and some fresh, sliced mushrooms. to compensate for the extra vegetables i used an extra cup of water and an additional 1/2 cup of milk. i also used mushroom flavored "better than bullion" and threw in some extra spices for flavor. it made WAY more than 6 servings. i'd say about 12, but it freezes well.

Fantastic Lemon Butter Fillet

i was a bit weary about this recipe because of the mixed reviews it received but it was delicious! we used fresh lemon but we skipped the lemon pepper(didn't have any) and the garlic (just plain forgot) and replaced the oregano with some sage. it had to cook a little longer than expected but we did have some larger fillets. we served it with green beans and baked potatoes with the left over butter drizzled on top and it was soooooooo yummy! we'll make this again for sure!

Turkey Pot Pie I

YUM! i made this for dinner tonight and it was fabulous! i added a can of mushrooms and a few other spices as well as an extra 1/2 cup of water to the vegetable mixture. i still can't believe how great this was we'll be making it a LOT! it did take me about 2 hours to prepare from prep to dinner table but it was totally worth it!

these were great! i made them with both ground beef and "boca veggie crumblers" and both versions were delicious! you couldn't even tell the difference! i stuck with the exact recipe but i put some shredded mozzerella on top like others suggested. YUM!

Slow Cooker Scalloped Potatoes with Ham

i made this recipe for the first time as a side dish for our new year's day dinner... what a big mistake! i had to triple the recipe so i used 2 cans of cream of broccli soup and 1 can of cream of mushroom. we cooked them on high for nearly 8 hours and they still weren't done and the potatoes were sliced very thin. they didn't taste good at all (maybe it was my choice of soup?) and i felt like my guests were choking them down.

this was the first pie i've ever made and it turned out beautifuly! it's delicious and very easy to make! i added some cinnamon and a few other spices to give it a little kick and it was gone in a flash! i'm lucky i even got a piece! i'll be making this recipe lots!!!

very very very good! i added a green pepper and a handful of mushrooms i had left over and needed to use up. this salsa tastes great and has just the right spice but it's just a little too watery.
