Chocolate Muffins

Very, Very good muffins! I added about 2 tablespoons extra cocoa to make them really chocolatey. I used large muffin pans, which made 12, therefore I increased the baking time by 4 minutes (I have a fan-assisted oven, so a regular oven might even need a little more extra time than that if you are using large muffin cups) and tried white chips. They tasted fantastic. My only problem was that the chips sank to the bottom. But I will still be making these again!

Basic British Scones

These were okay. I think that with some tweaking, they could be better. I would make them again, but next time I would make a double recipe, roll the dough a little thicker, and use a bigger cutter to yield larger scones. I would also add a little more sugar.

Mushroom Lentil Barley Stew

This is excellent! I made just a few minor alterations--I used all button mushrooms, as I had no shiitakes on hand. I also used one whole chopped onion instead of dried onion flakes, and cut the pepper in half. Next time I will add a little more broth, as the stew turned out really thick due to most of the liquid being absorbed. I will definitely make this again! Very hearty and very healthy.

Jo Jo's Favorite Banana Muffins

Excellent muffins, with a wonderful banana flavor. I will make these again. I do, however, agree with the reviewer who suggested reducing the baking time. These are a keeper!

Easy Vodka Sauce

This sauce is to die for! It has a gorgeous color and texture--looks very fancy, but with minimum work! I added some garlic powder, rosemary, fresh basil, oregano, and sea salt along with the tomatoes. After I added the cream, I added sliced fresh mushrooms, and mussels, shrimp, and calamari rings, along with a touch of cayenne pepper to add just a hint of heat. Next time, I would use fresh garlic, and add it to the onions. I also would use a bit less butter, or substitute olive oil instead. I would also add either the mushrooms OR the seafood, but not both. Although this takes a bit of time, it really is quite easy, and well-worth it! I served it over angel-hair pasta with warm bread. This one is a keeper!

Banana Bread IV

This bread is OK. I took the advice of other members and added lots of cinnamon and some nutmeg. I also used 1/2 brown sugar, and 1/2 white, and added 3/4 cup of chocolate chips. I read some of the reviews of others as well, and added about 1/2 tbsp of baking powder. However, the bread still fell a little, and I did NOT open the oven until after about 50 minutes. It took a LOT longer to bake than the specified time, even though I made more, smaller loaves.The batter tasted really good, and I will try and make this again, but will add more baking powder, and cut out 1/2 cup of sugar, whether or not I add chocolate chips. It was rather sweet. I should add, too, that I had made this to give to my neighbor as a thank-you for helping me, but in light of the fact that it fell a little, I didn't think it looked good enough. But my husband and I enjoyed it, and froze some of it as well. I am not writing this one off, but it needs a few more tweaks.

Lemon Thyme Rice

I made this, but with a few adjustments. First, I used lime juice instead of lemon; secondly, I substituted cilantro for the thyme, because I am not big on thyme. Fantastic! Definitely will make this again! Also, this would make a great bast for a lot of the cold rice salads served so often in the summer! Yum-thanks!

Southwestern Bean and Rice Salad

This is excellent! Made it for a "Mexican Fiesta" dinner with the British in-laws. I substituted black beans for the kidney beans, and used red pepper as well. Everybody LOVED it. I will definitely make it again! Very fresh-tasting and attractive, and a nice change from traditional mexican side dishes. One thing--this recipe makes A LOT! Thanks for a great recipe!

Cranberry Sauce I

I made this for Thanksgiving dinner (the first one since moving to England) and rather liked it. It didn't get the ooh-ings and aah-ings I had expected based on other reviews, but it was good. I made it with fresh-squeezed oj because I had run out of store-bought, used half brown sugar and half white, and added some cinnamon. It looked gorgeous in a cut-glass bowl-the color is beautiful. Next time I would cook it a bit longer until all of the berries pop, or mash it with a potato masher. I might try the suggestion of adding a splash of Grand Marnier next time too. The flavor went VERY well with the turkey.
