Banana Split Bars

Reviewed: Jul. 31, 2009
This was awesome! Like some commenters suggested, I used two premade graham cracker pie shells, instead of using the 9x13 pan. Very easy and very, very yummy! Two pies got gobbled up fast at a work BBQ! I'd recommend this :)

Double Tomato Bruschetta

Reviewed: Dec. 21, 2007
Delicious! Like another reviewer, I would suggest adding oregano and [a lot] more garlic...but that's according to your tastes, I guess :) I also chopped up the mozzarella into little pieces and put it in the mix, instead of sprinkling it on top. Anyway, got the stamp of approval from my very Italian family! They loved it!

Royal Hawaiian Pie

Reviewed: Jun. 29, 2008
Very yummy pie! I was skeptical of this, because it seemed too easy, but it turned out great! I accidentally bought graham cracker crusts instead of regular pie crusts, but it worked really well. I do agree with the other reviewer who said that it doesn't LOOK very appealing, however I covered it with cool whip and it got gobbled right up at my luau-themed party :)

Slow Cooker Bananas Foster

Reviewed: Jan. 24, 2010
I only used half of the rum suggested (1/8 cup) and omitted the coconut, but it turned out PERFECT. Had it with vanilla ice cream and it was delicious. Very easy and will definitely make this again.

Pumpkin Cheesecake I

Reviewed: Oct. 7, 2010
Loved this! The crust was amazing! My only complaint is that the filling was a bit runny, but that might be my own fault; I made my own whipped cream instead of Cool Whip and am wondering if that affected the consistency.

Mom's Best Peanut Brittle

Reviewed: Dec. 21, 2007
I don't know if it's because I'm a newcomer to brittle-making, but mine didn't come out looking quite the way I expected (the color was a little too light). However, the brittle was SO yummy, that the color didn't matter after a couple bites :)

Tropical Salad with Pineapple Vinaigrette

Reviewed: Jun. 29, 2008
Yum-o! I skipped the bacon, because some of my guests were vegetarians. I also added some extra vinegar because the dressing seemed a bit oily to me. The salad came out so delicious! I served it at a luau themed party, but will put it into my regular summertime rotation :)

Sugar Cookie Icing

Reviewed: Oct. 31, 2008
These LOOKED so great -- the frosting held really nice, bright colors! Tasted yummy too, but I think I'll actually try them with vanilla extract next time.

Cranberry-Pumpkin Cookies

Reviewed: Oct. 31, 2008
Like some other reviewers, glazed with powdered sugar/milk. I think that it added just the right amount of sweetness. Yummy, soft cookies -- loved the tangy cranberries. A nice change from the usual cookies I make.

Mexican Shrimp Cocktail

Reviewed: Sep. 23, 2009
Skipped the clamato and ketchup, in favor of spicy V8. Found that the horseradish, was a little much, so added more spicy V8 and lime A restaurant in our neighborhood makes this kind of shrimp cocktail and, with the above adjustments, the recipe actually comes pretty close!
