Homemade Flour Tortillas

This recipe turned out really well. It is a great way to have fun in the kitchen if you have the extra time. My boyfriend said these reminded him of Indian flat bread. They would make excellent gyro or falafel sandwiches.

Addictive Sweet Potato Burritos

Calico Squash Casserole

This is an excellent way to use up squash. I left out the peppers and water chestnuts. Made some cornbread stuffing and mixed it with the left over crackers and added cheese. I should have added some corn. This recipe is a keeper!

Black Bean Lasagna II

We loved this recipe. I did a few things differently though. I mashed the black beans with the refried beans before adding them to the sauce mixture. I also added a sprinkle of white sugar to the cheese mixture. I also laid sauce down first before putting the noodles in. The noodles soaked up all that yummy sauce. Love this recipe!

Apple Pie Muffins

This recipe took care of my muffin craving! I didn't have any buttermilk so I added 1 tsp of cream of tartar and a tablespoon of apple cider vinegar. I with held the urge to add cinnamon to the batter. There is no need with the streusel topping. I added a fresh vanilla bean only because I had them on hand. They look store bought. Yummie!!
