Amazingly Easy Irish Soda Bread

Delicious, rich, really easy. So quick coming together. I prepped this before making Delicious Ham and Potato Soup (off this site), and they finished at the same time. I wanted a bread to go with my soup; I was out of yeast; I tried this and was delighted. I subbed 1/2 the flour for white whole wheat. Will make this again.

Delicious Ham and Potato Soup

Easy, quick, and really really tasty. Between 3 adults, I had no leftovers. It was a great way for me to use leftover ham. Instead of bouillon, I boiled the veggies/ham in a can of chicken broth + water (to make 3-1/2 c) to lower the salt.

Zucchini Herb Casserole

I don't think this would have been very tasty as written. As suggested by other reviewers, I tripled the spices (and garlic), used 1/2 c brown rice, and only 1 c cheese. Still, it was just okay. I'll eat the leftovers tomorrow, but I don't think anyone else will be joining me. DH cleaned his plate but suggested it tasted how he thought prison food might taste, should the prison garden experience a bumper crop of zucchini.

Zucchini Brownies

Really, really good, and with no weird taste or texture from the zucchini. Mine came out cake-like, though. I added no extra liquids, and in fact used 3 cups of zucchini. I can't complain. With the frosting, they taste "just like chocolate cake" -- the words of my ridiculously picky 4-year-old. Will definitely make again.

Best Chocolate Chip Cookies

Really excellent cookie. Tastes almost like a butter cookie (with chocolate chips of course). Freezes well. I substituted whole wheat flour for 1/3 of the total, as I usually do with baked goods.

Best Steak Marinade in Existence

This is just perfect. I use it all the time for steak in stir-fry recipes, and last night I used it for grilling a big slab of beef. My husband was literally moaning at how delicious it was. I do substitute 2 cloves fresh garlic, pressed, for the garlic powder.

Peppery Beef Stir-Fry

My husband helped himself to not just seconds, but thirds. He and our dinner guest thought it tasted just like something you would get in a nice Asian restaurant. I seasoned it just as the recipe suggests, and it was VERY spicy. I think that was what made it such a crowd-pleaser. I should note that I used yellow onion and carrot instead of mushrooms and snowpeas, and that I marinated my steak overnight in the Best Steak Marinade in Existence.

Chicken Piccata II

Though the chicken was tender, it was extremely bland to me. I was also disappointed at the mushy coating. Perhaps baking the chicken, as other reviewers had done, and using the butter-sauce just as a gravy and not a poaching liquid would be better.

Banana Sour Cream Bread

This is THE most delicious banana bread I've ever had, EVER. My kids love it, and it is so easy to make. I substitute whole wheat flour for 1/3 of the total flour, and it tastes just the same to me. Even my husband, who dislikes quick breads of all kinds, ate many helpings of this at breakfast.

Indian Tomato Chicken

This dish had a lot of flavor, and the chicken was very tender, but it was not spicy enough for my taste. A generous wallop of Sriracha was added at our table. The hubs loved it, though, so I'll be making this again.

Spinach Stuffed Chicken Breasts

This recipe deserves 50 billion stars. My exceedingly picky husband is still raving about it a week later. It was also so easy to put together. I pounded the chicken breasts instead of butterflying, and it only needed to bake for ~30 minutes. I also broiled for 5 minutes at the end and the bacon was perfectly crisp.

Barley Primavera

I give this dish a big "meh". It was a great way to use up my veggies -- I used yellow onion, carrots, chopped fresh tomatoes, and fresh green beans -- but I found it pretty bland. I ate it and the leftovers, but my husband wouldn't touch it so I won't make this again.

Spicy Black Bean Soup

This soup was so good that my picky three-year-old slurped the broth, and the hubs called it my "cure-all" tonic because it wiped away his stomachache. I used three cans of black beans (and no extra salt) instead of dried; no bay leaf (didn't have any); 4 pressed garlic cloves instead of minced garlic and garlic powder. I also used 3 crumbled slices of bacon in place of the enormous amount of ham because we were in the mood for a more veggie-oriented soup.
