Julie's Chicken Salad

Overall a nice chicken salad. I really enjoy fruit in my chicken salad instead of celery and such, so this was a good one for me. I did add jicama as well, which while quite good, also blended a bit with the apple. As I made it earlier in the day than we were eating it, I did wait until just before serving to add the avocado and then sliced it on the bread before putting the salad mix on top which worked well. Not putting the avocado (which I do feel was important to the recipe) on right away allowed me to make a little extra for leftovers without worrying about that ingredient going brown and ruining it.

Blue Cheese Bites

I actually cut into the bisquit quarters and put the blue cheese inside the bites, which worked well. Overall tasty, easy to make for some variety for a family dinner with the single portion bisuits that are now available.

Carrot-Bean Sprouts Salad

I love bean sprouts in Thai and Vietnamese food and was looking for another way to use them when I get a big bag. This was a great solution. I did burn the mustard seed the first time by accident, so reccomend that you watch that carefully, but otherwise really enjoyed this recipe!

Lemon-Orange Orange Roughy

So good! I used bottled orange and lemon juices and just as good. I also tried it a second time with tilapia, which was just as tasty!

Baked Vegetables I

LOVE this! Definately cook the potates a bit first and the oven bag was a great tip. I tried this for the first time last week and have already made it twice, trying different veggies and soup mixes- it's great anyway you mix it up!

Vietnamese Sandwich

We really enjoyed this. Used bean sprouts instead of the onion, but it was easy to adjust to different preferences of spiciness with the chili sauce.

Incredibly Cheesy Turkey Meatloaf

Good stuff. I am not a huge meatloaf fan, but my boyfriend is. This was a really good compromise. I did add extra garlic and used a variety of cheeses- whatever I had in my fridge- all shredded up together. Overall, it was successful for us both!

Couscous and Cucumber Salad

Love this! Nice and light, good side to a basic fish. I've made it a few time, and do add a fair amount of garlic and have also tried with minced onion when I didn't have the green onion available, which also worked fine.

Crab and Noodle Cakes with Cilantro-Lime Mayonnaise

These were great. My boyfriend requested that I make them every Friday from now on :-) The only suggestions I would make would be to make extra mayo and you can break up the noodles ahead of time as long as you have a fine mesh strainer. Cutting cooked noodles was kind of a pain.

Broccoli and Cauliflower Casserole

I actually added diced chicken to this as well (the pre-cooked kind in the bag), which made it a little more of a "meal" and was very good. The only complaint I had was that it took so many pots and pans! A little too many dishes to do :-)
