Best Tuna Casserole

Well I didn't have everything to make this tuna noodle casserole but it was still the bomb. I didn't have shredded cheese but I did have packages of sliced colby and Pepper Jack cheese, I had mixed veggies instead of peas and french fried onions instead of potato chips. So with all this in mind I made up the casserole as directed above replacing peas with mixed veggies. Since I had sliced cheese I did one lay of everything mixed together then did a layer alternating the two kinds of cheese then poured the rest of the mixture and layered alternating the different kinds of cheese. Then I ran the French Fried Onions thru the processor to make crumbles then baked. Oh my goodness!! The flavor was absolutely delish and there was a kick to my Tuna Noodle Casserole.

Guacamole

Wow! I am not a guacamole lover; however, YUM! Used a dash of salt, cut the cilantro down 2TBSP, 2-3 pinches of Cayenne, put small amount red onion, minced garlic and a shallot thru food processor. Plus took the advice of another and put 2-3 TBSP of salsa. WOW, WOW!!! YUM! Can't wait to try on my homemade fajitas tonight!

Almond Chicken Casserole II

Pleasantly surprised family loved this recipe and gobbled it all down. Did as others suggested with 1/2 sour cream and 1/2 mayonnaise plus used 1 1/2 cans cream of chicken soup. I also used honey bunches of oats with almonds but in small portion so not to make it too sweet. For seasoning I used Emeril's Essence at 1 - 1 1/2 tsp. Sprinkle cheese on top and back! Family loved it!

Pumpkin Cake III

WOW, This was great...here are my suggestions..use Libby's Pumpkin Pie mix in can, 1/2 C applesauce w/ 3/4 C oil. 1 tsp allspice, 1 tsp nutmeg, 1 tsp pumpkin pie spice & 1/2 tsp ground cloves. I also used Pure Mexican Vanilla, YUM!! Use Cream cheese frosting suggested by all others.

Pastitsio II

Excellent recipe of Pastitsio, I as many other viewers added cinnamon just not the same without it. I also used a Merlot as I didn't have a dry red wine and it still turned out awesome!

The Best BLT Sandwich

This was good but my favorite is to take about 1/4 - 1/2 tsp.(depending on your taste) of Luzianne Cajun seasoning and mix into 1/4 C. of Mayonnaise. Spread onto toasted bread - this is the best

Key Lime and Pretzel Pie

This is very good. Like another viewer I was not sure about condensed milk and lime juice so I combined two recipes. I used a Key Lime recipe that uses eggs and you bake for 15 minutes along with the pretzel crust. Very good!

These are excellent beans. I also use Bush's Baked beans, cut the sugar in half and I added 2 tbsp. mustard and 1 tbsp. of Apple Cider Vinegar.

Orange Roughy with Citrus Sauce

Well this was very good however like other viewers; I added my own twist. I didn't have oj however I did have "Perfect Mai Tai" left over from my hubby's 40th birthday party Saturday night. You got it. I substituted the Mai Tai for the OJ plus I matched in measurement with pineapple juice plus I added 1-2 tbsp. of crushed pineapples. The other thing I did was make white rice and added some of the citrus sauce to the rice and added crushed pineapple to the rice as well. Great side dish!

Boilermaker Tailgate Chili

Wow! My husband said best chili he had ever tasted. We are watching our red meat intake so I used 1lb of very lean hamburger, 1 lb. ground turkey and 1/4 lb of turkey. I browned all of the meats together. I also used (1) 28oz can of fire roasted tomatoes with one can of regular tomatoes. We do not like super spicy so we used 2 mild cans of beans with 1 can of hot spicy beans. Also used Sweet Vidalia onion.

Game Day Hamburgers

Okay my husband just adout died over these hamburgers. I used Portabello mushrooms, bacon and monterey jack cheese for the filling. Per another viewer make small hamburgers and press the filling into the hamburger and place another patty on top and seal. In the meat mixture I used 1/3C. bread crumbs, 1 egg (egg beaters), 1 tsp. worchestshire sauce, 1 1/2 tsp. montreal steak seasoning.

Red Skinned Potato Salad

This is the most awesome potato salad. My husband and our friends are not potato salad eaters and they could not get enough!!!! My adjustments to the recipe are as follows: I sauteed the onions in the bacon grease with 2 tsp. of apple cider vinegar. 1C of mayonnaise and 1C of sour cream like suggested by another viewer. I used horseradish mustard instead of stone mustard. Use sweet vidalia onions. We are not huge lovers of eggs so we didn't use any and didn't miss them at all.

Savory Garlic Marinated Steaks

Wow, marinated these 2 1/2 days for a houseboat trip and they were to die for. It was served with sauteed Portabello mushrooms and "Red Skinned Potato Salad" from this site for a killer meal.

Mexican Casserole

Excellent recipe. I usually don't take the time to rate these recipes but this one I could not resist. Cooking the chicken tenderloins in oil, onion and garlic was the bomb plus I double the salsa and omitted the water and used the mexican corn as suggested. THis is awesome on soft tortillas with sour cream!!!

Awesome Carrot Cake with Cream Cheese Frosting

This really is an awesome cake! My husband loved it. I made the following adjustments and it came out near perfect. 2 1/2 Cups of Carrots, 1 3/4 C.White Sugar, 1 1/2 tsp. cinnamon, 3/4 C. Vegetable oil, 1/4 C. Applesauce, 1/4 tsp. nutmeg, 1/4 tsp. all spice plus I soaked a handful of raisins in the pineapple juice for about 20 minutes before mixing into the batter. I had to add about 5-8 minutes to the cooking time.

Hashbrown Casserole

This recipe is very good and a family favorite. I omit 1 can of cream of chicken and replace it with nothing. Instead of crushed corn flakes I crush up potato chips and use those. I wouldn't thaw the potatoes either. Just use them frozen and cook that way otherwise it may be too mushy.
