Peanut Butter Cookie Bites

My husband and I are diabetic. Welcome back real cookies! The taste is excellent. No aftertaste. I have used Splenda when cooking acorn squash, with wonderful results. These cookies are an answer to a prayer. Thank you Splenda!

Basic British Scones

What a disappointment! This are bland and boring. The cooking time of 10 minutes needed to be doubled and I had to add more liquid. I used butter for the flavor-but there was none. This recipe is aptly named...basic to say the least.

Chocolate Rum Balls I

Just let these set up for a couple of hours, dust your hands with powdered sugar and they roll up perfectly. Got great reviews from my guests. Terrific hostess gift.

Brandy or Rum Balls

Quite tasty! I didn't roll them in my hand. I used a small cookie scoop-like an ice cream scoop-with a squeeze handle that ejects the dough. You get a rounded top with a flat bottom. (Perfect for portion control). I put the ground nuts in a small deep bowl and dropped the dough balls into it. You can do about four at a time. Just shake the bowl in a circular motion. The dough rounds itself out and coats each one. It really speeds up the process. I gave these as gifts as got rave reviews.
