I love Greek, Mexican, Italian, and Indian cuisines. I am also a big fan of comfort food, especially in the form of pastas.

Holidays are always a great time to share time in the kitchen with your loved ones. I love coming up with creative variations on traditional cuisine.
My cooking triumphs
Hosting a dinner party for twenty people. It was stressful but it felt great after it went off without any complications!
My cooking tragedies
My 120 chocolate caramels that turned out oily and tasting of burnt sugar! Needless to say, I did not hand them out as favors at a party I hosted.

Two Step Creamy Cheesecake
Excellent and very easy recipe!! Cut the whipped topping to 8 oz as per previous reviewer suggestions. As strawberries aren't so flavorful at this time of year, I melted about 1/4 cup of strawberry jam and tossed with the sliced stawberries which made them taste amazing! Also drizzled some melted chocolate on top. The whole pie was gone between 4 people!

Chutney Chicken
Considering how few ingredients, this was pretty darn good! Cooked up some chicken thighs and breasts. The only thing I wasn't too fond of was the crunchy bits of onion from the onion soup, but other than that, it was great.

Artichoke Spinach Lasagna
Thought this was an excellent vegetarian lasagna. I substituted fresh spinach for frozen and artichoke hearts packed in water for marinated. Whole wheat noodles were used instead of regular. As well, I used a combo of dry curd cottage cheese with part-skim mozzarella and skipped the feta. Next time I would cut down on the vegetable broth by about a quarter cup as it was a bit watery. But everyone loved the recipe and I will make again.
