Crispy Pork Carnitas

I cannot believe that I am the first one to review this recipe. I have another carnitas recipe that I usually use but this one looked interesting and I have used another one of Chef John's recipes and loved it. I followed the directions and the ingredients except I didn't have the Chinese 5 spice. I substituted Goya Sazon sin achiote. The carnitas were juicy and crispy. Do not forget the drizzle at the end. I will be deleting my other carnitas recipe. Thanks Chef John.

Carne en su Jugo (Meat in its Juices)

I made this tonight and didn't change a thing and it came out perfectly. I kept wanting to drift off from the simple recipe, but I didn't stray. Great taste. The cilantro, lime and onion added before serving are key.

Sky High Yorkshire Pudding

I am a big fan of Yorkshire Pudding. It's one of those things that my mother made on special occasions. I followed the recipe except for replacing the 1/4 cup of oil with 1/4 cup of the meat drippings. That's the way Mom made it.

Salisbury Steak

Thank you for sharing this recipe. I followed the directing with the exception of adding sliced baby bella mushrooms. I served it with homemade mashed potatoes and brusssel sprouts. My wife said it was "lick the plate good."

Sunday Gumbo

Shrimp with Tomatoes and Feta Cheese

I made this last night and it was fantastic. I served it over spaghetti and it was a big hit. Very easy and do not be scared away by the jalapeno. I was not too hot by any means.

Firecracker Grilled Alaska Salmon

This was easily the best fish dish I have ever had. I sent it out to all of my friends and family. Everyone that tries it raves about it. This is what we call in my house a definite "Do Over." I added some white wine and reduced the marinade like some people suggested. This was lick the plate good.
