Jasmine's Brussels Sprouts

Made this adding shallots to the garlic, bacon instead of pancetta, and parmesan when served. My husband and I both thought it was delicious, but found it to be a little bland, so we also added a little garlic salt.

Chicken In Sour Cream

I used four bonelesss skinless chicken breasts and added a small bag of frozen vegetables (sugar snap peas, carrots, and baby corn). I used 1/2 light sour cream and 1/2 regular because that is what I had on hand. I did not cook the chicken breasts ahead of time. Instead, I covered the casserole for the first 40 minutes, and then uncovered it for another 30 minutes to let it brown. I served it over egg noodles as another reviewer had suggested. My husband couldn't stop raving about it and ate half the casserole!

Winter Fruit Salad with Lemon Poppyseed Dressing

I followed the recipe exactly as written and it was very good, but I think it could be made better with the addition of some tangy red or green onion. The dressing made much more than we needed, so I'm making the salad again tonight!

Lemon Bread Pudding

Huh--I made this exactly as written and it never set. I extended the cooking time to about an hour and 15 minutes, but it was still runny. I will not make it again.

Summer Bean Salad II

Delicious! I have been using allrecipes.com for years, and this is only the third recipe I have rated 5 stars. This is unbelievably good considering the simple ingredients. The fresh lime juice and basil are key. I used fresh corn, cherry tomatoes, and basil from my garden. What a wonderful way to use up summer garden bounty. I made it once with fresh chives from my garden instead of onion, and it was wonderful.

Crushed Pineapple Sour Cream Pie

I make this pie with a store-bought, reduced-fat graham cracker crust; sugar-free, fat-free pudding mix; 1% milk; light sour cream; and light Cool Whip for an unbelievably delicious low- calorie dessert. NO ONE guesses that this is a "diet" dessert. My husband is not a huge pineapple or "light" fan, but this pie gets a big thumbs up from him. Chopped candied ginger sprindled on the top is a must. 5 stars for being simple, delicious, and easy to make "light."

Roasted Vegetables

Delicious but a bit greasy. I will use less oil next time, perhaps even just a light spray of olive oil. I added baby carrots and baby zuchinnis (from Trader Joes) and two cloves of minced garlic. It made two large baking trays full of yummy carmelized vegatables. My vegetarian daughter gobbled them up. The cooking time was right on, but the prep time was waaay off. It took me close to 45 minutes to peel and chop all the vegetables, including the fresh herbs.

Risotto with Asparagus

I've made this twice and although it tastes a little bland, I'm giving it 4 stars because I like that it is not as rich and high in calories as some risotto recipes that use heavy creams. The consistency is nice. I like to add a bit more parmesan when it is served. I saw a similar recipe on another web site where they add fresh rosemary, and I'll try that next time. I'll also add more asparagus than is called for, as I'd like a bit more in the mix. This recipe makes quite a large amouunt! Mmmm leftovers.

Broccoli Cheese Cornbread

Argh, I accidentally hit return before I was done with my last review. I just wanted to add that the broccoli cornbread recipe on the official "Jiffy" web site calls for TWO boxes of their cornbread mix, not one. Otherwise, their recipe is almost identical to this one.

Grandma Johnson's Scones

I'm always a little wary when reviews for a recipe are so gushy, but in this case, I have to gush right along with everyone else. This recipe is hands down the best scone recipe I have ever tried. The scones are DIVINE--they taste amazing and the texture is just scone-perfect. Bravo, Grandma Johnson!

Vegetarian Four Cheese Lasagna

Divine! I used roasted butternut squash instead of the pumpkin, and I only had four tomatoes, so I added a jar of sun-dried tomatoes. It was awesome! I made it for the vegetarians at our Halloween pumpkin-carving party, and it got rave reviews. Very rich. It's very rich.

Chili Rick's

I've made a lot of different chili recipes over the years, and this one didn't sound all that fabulous, but I trusted the other reviewers and took a leap of faith. Wow, this is some fine chili! I used 1 lb. hot bulk sausage. I served it at a Halloween party and it got rave reviews. My daughter's boyfriend said it is the best chili he has ever eaten. This one is in my Recipe Box for keeps!

Best Ever Muffins

Huh, these came out very dry. I did substitue 1 cup whole wheat flour and used Splenda for half of the sugar, so maybe that made the difference. I also added some vanilla, cinnamon, about 1/2 cup of frozen blueberrieis, and some lemon zest, but even with the additions they were a bit bland. Oh, and I sprinkled some cinnamon sugar on the tops. They did puff up to a nice muffin appearance, although I only got 7 good-sized muffins out of the recipe. This is a handy muffin recipe, as it is simple and uses ingredients that I always have on hand, so I will continue to try tweaking it until I get them right. And I like that it uses a full cup of milk. Am always trying to get milk into my kids. Next time I'll try adding more fruit--I think a few mashed bananas and some applesauce would moisten things up. Oh, just realized that I used nonfat milk--that might have added to the dryness as well. Will try milk with some fat in in next time!
