Asian Coleslaw

Delicious! I had something similar at an expensive Japanese steak house and haven't been able to forget it. This recipe is a dead ringer for that one at a fraction of the cost! I was in a hurry, so I used pre-shredded coleslaw mix and halved the dressing, then tossed in a handful of crumbled ramen noodles. I could eat the whole bowl in one sitting!

Basic Pasta

I thought homemade pasta was for Italian grandmas and people with fancy pasta machines...until now! I have no machine, no fancy rollers, no stand mixer and no previous experience making pasta, and this turned out AMAZING. I followed other reviewers' examples and let the dough rest for about half an hour after kneading (turns out kneading by hand is a good stress reliever!), then rolled it out thick with a plain old wooden rolling pin and cut into big squares with a pizza roller for chicken pot pie. It was so good I had to call my mom and brag!

Key Lime Pie VII

I made this for a friend's birthday, and among the praise and compliments were, "This pie is so good I could take a bath in it," and "best key lime pie I've ever had." The taste and texture were absolutely amazing. The only changes I made were the addition of fresh lemon zest and a dab of green food coloring, whipped cream for topping and cinnamon grahams for the crust.

Gooey Chocolate Icing

Just a note to those who think it's too thin - you have to stir it for a long time (10 minutes or so) to get it to thicken, but it's worth it. I burned my mouth several times tasting it before it cooled. I used it on a Crazy Cake for a butter-free, egg-free treat and it was amazing.

Simple BBQ Ribs

I've never made ribs before and these were so tender they fell right off the bone. My roommate couldn't stop raving about how exceptionally good they were! I let the ribs marinate in the broth after boiling for about 2 hours, and doubled the barbecue sauce - you can't have too much of a good thing!

Chocolate Chip Cookies Lite

Having read the reviews first, I was prepared for pancake-y texture, but was still surprised at how thin the batter was. I used Gluten Free flour, so that may have been the problem. I increased the flour 1/4 c. and added butter flavoring. They are definitely more bread-like than cookie-like, less so if slightly overbaked. But not bad for an emergency craving. And even if I eat all 12, I won't feel guilty!

Beth's Spicy Oatmeal Raisin Cookies

Cookies came out too soft -- to the point of falling apart -- even though I followed the recipe to the letter (for once!). They're pretty good, but I think I'll try less shortening next time.
