Cake Mixes from Scratch and Variations

Good recipe, I used it to make a yellow shaped cake and it rose nicely. I did as one reviewer suggested and changed shortening for oil and increased the milk. Perfect for when you don't want to or don't have time to get a cake mix.

Aloha Quick Bread

I made this yesterday. I omitted the walnuts so my son could take it to school. I used candied peel as thats all I had to hand and it gave the bread a much stronger orange flavour. I could not taste the bananas but I don't mind that :P I used a bundt pan as my loaf tin was too small and it didn't need as long to cook. I took it out after an hour but probably could have taken it out sooner as it was a little crispy at the edges. A lovely taste, lots of coconut but I think I would add more pineapple next time.

Apple Crisp

Fantastic!! So tasty. The nuts give it such a rich flavour. I agree that perhaps more apples would be better. I did not have any butter so used spread which meant I had to add extra flour and brown sugar to get the crumble consistency needed.

Cinnamon Roasted Sweet Potatoes

Very tasty, liked by the whole family. I reduced the oil as per others and they were not oily at all. I did not use the lime juice and do not think they lacked anything. Easy and tasty!

Homemade Liquors

Very easy and simple to do. I used golden sugar so mine turned a slight yellow colour which was great for Vanilla. I also did strawberry and lemon flavours. Very sweet but I am sure if you cut back on the sugar it would suit all palettes. As for me I like it sweet and I am giving it out as Christmas gifts this year!

Apple Breakfast Bread

This bread is excellent, moist and full of flavour. I used mixed spice rather than cloves and the smell while baking was lovely! I followed other users by going for a 45 mins bake time but in the end it needed almost the hour anyway. It is a little hard on the outside but inside very moist. I will be making this again!

Pineapple Scones

Not a bad recipe. A little dry yes but if you top with butter and a little honey they are very nice. I did not have any pineapples so used a can of fruit cocktail, quite a nice variation but would like to try it with just pineapples next time!

Better Slow Cooker Robust Chicken

This is an excellent one pot dish, with everything just going straight in the slow cooker for speed and ease. At the suggestion of another reviewer I rinsed the olives and placed a cut potato in the mix. Not a salty sauce at all. I did not have soup mix so made up 1/2 pint of chicken stock (did this for 3 people). I also had peppers rather than mushrooms and for the last half hour I included rice to mix in with it. This did take some of the lovely sauce away so next time I would cook this seperately. I think the only other thing I would change would be to get diced/chopped tomatoes that have italian style herbs already mixed in for added flavour.

Holiday Mincemeat Muffins

Fantastic! The recipe actually made me 24 muffins! Very fruity, not overpowering at all as you might think with mincemeat. I did not bother with the glaze as they are mainly for breakfast.

Chicken Cacciatore and Pasta

Very tasty though I also included a red pepper in mine and uncovered for the last few minutes to reduce and thicken the sauce. My husband would have preferred more garlic too. Would make again. I only had fusili pasta and that worked fine.

Chewiest Brownies

I think these are fine. I reduced the amount of sugar to 300g from 400g as per other reviews. I left all other ingredients the same and I mixed the sugar, butter, vanilla and eggs together first before adding the dry ingredients a little at a time. I used a 10in round and spread it into the pan. I cooked for longer than the recipe stated as I was not comfortable with the raw feeling of the mix after 30 minutes. I cooked for 35 mins then left in the oven as it cooled down for about another 5 mins. It got quite hard on the top but in cutting into them found the rest of the mix was chewy and soft. Very delicious! Planning to share these with ice cream on top!

This and That BBQ Sauce

Lovely sauce, I too used molases as I had no brown sauce. Would say it was a bit vinegary in taste so next time I would cut back on this ingredient. I also did not have mustard powder so used some French's mustard and it work pretty well.

Dark Chocolate Cake I

Oh wow!! This recipe just makes the most moist, light, and airy cake! I was so pleased with the results. It made a good size cake which I was able to decorate with ease. I actually had large eggs and only needed 3. I won't be making any other chocolate cakes ever again!

Spicy Pear Cookies

Excellent moist soft cookies. I omitted the walnuts as my son is too young to eat them yet but we all loved them! Think they would be just as good without the glaze as this made them a little less cookie like. I also feel that when I bake them again I will leave them for longer (I baked them for 20mins anyway) to make them easier to hold as they just wanted to fall apart.
