Tom Ka Gai (Coconut Chicken Soup)

This recipe is awesome. To prevent curdling of coconut milk keep soup at a lower temperature. I kept it at 200 degrees. Do not bring it to a boil. Also try to stir continuously. I added thai chili sauce instead of cayenne, canned straw mushrooms, a pinch of sugar, low sodium chicken broth instead of water, 2 tbs of soy sauce with fish sauce, lime slices. I did not mince the ginger I cut it in visible slices so that you could pick them out. I did not use turmeric. It tasted just like the tom ka at my favorite Thai place. With a brand new baby it's hard to go out to eat so I am so glad that I could recreate this soup at home with the help of this recipe!

I liked how simple and inexpensive it was to make these. Just like the ones I buy from my local Asian grocery store. I did have to add more flour for a thicker consistency and I did not ball them in my hand. I used a melon baller, scooped them into boiling water then stretched them after they were cooked, as I did a coating of coconut. I would also modify and use 1/4 tsp salt rather than 1 tsp. It was too salty for my taste. After modifying the recipe they were great though! Reminds me of the treats mama would buy for me in the fish market when I was growing up :)

Conchas (Mexican Sweet Bread)

I thought the recipe should have included letting the yeast bloom and foam in the warm water for a few minutes before adding the other ingredients. The first time I tried the recipe the dough wouldn't rise. It also needed to included temperature of liquid. I warmed the milk a little so that the yeast could bloom. I had to add a little extra milk. I think if one really knows the science behind bread and yeast it could be a great recipe but for someone that has little to no experience with yeast breads it could be a waste of time and money.

Apple Streusel Muffins

These muffins were so easy and yummy. I added maple glaze on the top of the muffin after it cooled. Next time I make them I will probably use more cinnamon in topping. I will also add applesauce for moisture and 1/3 butter instead of 1/4.

Ube-Macapuno Cake

This was my first sponge cake. I decided to use the batter to make a roll. It was light, moist and spongy. Perfect batter. I sifted flour first, then measured. I added shredded coconut on top and coconut extract to frosting. I used 1/2 the liquid in the frosting and had to add more sugar. I also used frozen taro puree that I picked up in my local Asian market to save time. My entire family loved this cake! The only thing that needed improvement was the frosting.

Bread Pudding

This recipe is so yummy. I made 2 loaves of homemade french bread the night before. I thought I would make bread pudding with the day old leftover bread. The family loved it. I followed the direction for the bread pudding exactly, but I made two sauces. For the cream sauce I used 1 cup of heavy cream & I reduced the sugar to 1/2 cup. I also made a caramel sauce with brown sugar, butter, and a little cream. I topped the bread pudding with a combination of the two sauces.

Fresh Blueberry Pie II

Angel Salad

Very good. My 11 year old daughter made this for me for Mother's Day! She did a great job. I would have left out the celery and added mandarin orange instead. Everyone picked out the celery. It was a bit bitter but we liked the crunch.

Black Bean Brownies

AMAZING! I made two batches for my family of 6 and they were GONE IN A DAY! Instead of sugar I used a combo of splenda and Agave nectar though. And I lightly dusted with powdered sugar. My VERY PICKY two year old gobbled them up!! I couldn't believe it bc I can't get him to eat anything!

Apple Orange Bread

I liked this recipe. I did subsitute 2 cups whole wheat flour and did a half white half whole wheat flour mixture. I also used 1 cups brown sugar and did half brown sugar half white sugar mixture. My two year old loved it! I like the simple fresh flavor of just citrus, so I just used oranges and lemon extract. The shortening tends to make the outside of the bread hard and crunchy, but the inside is moist.

Honey Bran Muffins

This recipe is great. I followed the recipe with a few substitutes. I used apple juice instead of pineapple juice, whole wheat flour instead of allpurpose and I used Raisin Bran Cereal. With the cereal, I separated the raisin from the bran flakes then followed the recipe accordingly. These are great in the jumbo muffin pans. When I took them out of the oven to cool I smothered the tops with honey. In the morning at room temp they were nicely moist with honey. Great with a cup of joe.
