Camp Cornbread

Yum! Double everything but the canned corn. 350 for 30 mins was perfect.

Glazed Lemon Bundt Cake

Reviewed: Feb. 4, 2011
Awesome! Doubled the lemon extract in both cake and glaze. Very moist and delicious. I boiled the glaze ingredients together to dissolve sugar, cooled, then spooned over cake. Oiled and dusted the pan with sugar as other had recommended. Will most definitely be making in the future.

Tortellini Soup I

Reviewed: Feb. 3, 2010
I feel like I can properly review this now that I've have tasted the leftovers. Delicious! A great way to get a big vegetable serving in your diet. I really drained the sausage well, and cooked the onion/garlic in a non stick pan so I didn't have any grease in the soup. Very good. I followed the recipe with the following exceptions: I never measure exactly, red and yellow bell pepper, and no red wine or parsley. Highly recommend you try this hearty soup. I had it with and without parmesean - both good. Paired perfectly with a fresh multigrain bread from the bakery. Enjoy a bowl for youself.

Chicken Tortilla Soup I

Reviewed: Jan. 24, 2007
Wonderful soup. Not like the first chicken tortilla soup I had in Mexico, but the best this side of the border. I actually cooked my chicken breasts in the onions, garlic, and tomatoes until cooked then took them out, chopped/shredded, and returned to the pot. Alterations: I used what I had on hand (no hominey), frozen corn, my grandma's canned stewed tomatoes, canned jalapenos, and crushed blue corn chips on top. Don't skimp on the black beans or corn! Very filling and very tasty.

Simmer Family Turkey Stuffing

Reviewed: Nov. 17, 2006
Very good. I wans't sure it would be okay seeing as there is no broth to keep it moist. But it was moist. I used thyme, sage, salt and pepper as the seasonings. Turn out great. 4 stars because my husband said it was slighty eggy and it is not as good as his mother's recipe (which is the best stuffing I've even tasted - it's made with a loaf of bread that is called Turkey Time it is baked with seasoning it it, can only find it in Canada).

French Beef Stew

Absolutely wonderful. I did make mine in the crockpot and I didn't put any mustard in because it tasted so good as it was. Great recipe.

Black Bean and Couscous Salad

Reviewed: Aug. 28, 2006
Followed the recipe, except doubled the dressing ingredients. It was okay. Nothing spectacular. I thought the green onions were a little much for my taste. I doubt I would make again. It sounded really good.

Cajun Chicken Lasagna

Reviewed: Aug. 19, 2006
Very good, it really does get better for leftovers. I added double-triple the veggies. I used my own mix of spices for the "cajun" spice. Made my house smell very yummy.
