Chuck and Potato Bake

Yellow Squash Casserole

This was excellent. I brought it to my family's Thanksgiving and everyone loved it. I did saute the squash with the onions & some garlic in butter instead of boiling it. I also used zucchini and yellow squash for nice color. Besides that, I followed the recipe. Really, it was delish!!!

Raspberry Cheese Spread

I made this for our family Easter dinner... everyone loved it. I did add some sour cream, as the mixture seemed very "stiff". The raspberry adds the perfect sweetness.

Baked Cream Cheese Appetizer

I served this at a party and everyone loved it! I didn't have dill weed on hand, so I sprinkled the cream cheese with garlic powder, onion powder and a little bit of celery salt. I served it with pita chips and garlic ritz. DELISH!

Cherry-Blueberry Pie

This recipe is GREAT! Very easy and tastes delicious. I'm not a big fan of cherry pie, but had pie crust and frozen blueberries on hand that needed to be used up. I found this recipe and the reviews enticed me to make it. Boy, am I glad I did. I served it at a small party while it was still warm... it got rave reviews!!

Stuffed Peppers with Turkey and Vegetables

Awesome! I didn't add the extra pepper to the mix - only used the tops. Instead of the diced tomatoes and tomato paste, I used tomato sauce (Ragu's Super Vegetable Primavera - added extra veggies). I also didn't precook the peppers, just stuffed them and baked them for 40 minutes. My husband ate his in what seemed like two minutes! Here is the exact recipe I used: DIRECTIONS 1. Preheat oven to 350 degrees F (175 degrees C). 2. In a skillet over medium heat, add the turkey, Italian seasoning, garlic powder, salt and pepper. Cook the turkey or beef until no longer pink. Set aside. In same skillet, heat oil. Add onion, mushrooms, zucchini, and chopped pepper tops and cook until tender. Add spinach and stir until wilted. Return turkey to the skillet. Mix in the tomato sauce. 3. Place the red peppers into a square glass baking dish. Stuff the peppers with the skillet mixture. Add any remaining mixture to baking dish around peppers. 4. Bake peppers for 40 minutes. 5. While peppers are baking, cook pasta according to directions on box. After draining pasta, add a bit of olive oil to keep it from sticking. 6. To plate, place pasta on plate and top with pepper. Sprinkle with parmesan cheese, if desired. Hope this helps - these came out perfect!

Baked Potato Salad I

This was soooo great! It definately reminded me of twice baked potatoes. I added some garlic powder and instead of onions, I sauteed some shallots in butter, then added them. For cheese, I used Kraft's Four Cheese Classic Melts (mostly because my family loves cheddar - and it is a combo of cheddar and american). It was a big hit!! I will DEFINATELY make this one again.

Strawberry Kiwi Tartlets

This recipe is good, however the kiwi sauce was a bit tart for my taste. Perhaps my kiwis were not ripe enough. But even without the sauce, this makes a great and pretty easy dessert.
