Green Rice I

This was very easy to make and tasted great. I used milk + margarine instead of evaporated milk. I also added some garlic powder and italian seasonings for flavor. Didn't have enough shredded cheese so I used a little parmesan. It turned out great! I did have to cook it for a little longer than the recipe called for.

Green Beans Amandine

If I could give this recipe 7 stars, I would! I've made it several times now and it always turns out excellent. I cook the beans in the microwave to save time but other than that follow the recipe exactly! This is a great recipe because it's so easy but it looks really fancy! Thank you, thank you!

These are excellent and a classic. We aren't big butterscotch people so I used peanut butter chips instead of butterscotch. I also doubled the chips on top to have a nice chocolately layer on top.

Butternut Squash Casserole

This tastes more like a dessert unless you cut the sugar about in half! It was definitely a hit! I added some cinnamon and brown sugar to the pecans on top before sprinkling them on and it made it nice and crunchy. This will now be on my holiday menu!

Triple Strawberry Cake

This was very good! I used a white cake (which I think had some almond extract in it) so it was very light and fluffy. Not as much of the jello ran into the cake as I would have liked so I think I need to poke bigger holes next time. It also held up well in the fridge for several days after I made it.

Slow Cooker Chili II

This was excellent! I doubled the recipe and used black, kidney, pinto, and chili beans. I also used 3 cans of diced tomatoes and two cans of tomato paste plus 1 cup of water instead of the pureed tomatoes. I also added a can of corn instead of the celery. The seasoning was excellent and this is a good recipe to play with by adding different beans and veggies.

Apple Yam Casserole

This was excellent! It tasted like a pie filling! I left the skin on the apples and layered them on the bottom of the baking dish. Then layered canned sliced sweet potatoes on top. Then dumped a bunch of golden raisins on top. Then I made the sauce and poured it on top without mixing it in and baked in that way. I didn't use the lemon slices but instead put a touch of lemon juice into the sauce mix. It was great... better than I thought it would be!

Glazed Almond Bundt Cake

This was excellent! I added more almond extract to the cake and glaze and doubled the glaze to have enough to drizzle all over plus pool some in the center of the cake for presentation.

Baby Lettuces with Green Apple, Walnuts, and Dried Cranberries

This was amazing! I wasn't sure how the dressing was going to be but I made it exactly as stated (with vanilla yogurt) and it was very good and tasted summery! I probably could have put more lettuce since it seemed like there were a lot of cranberries, walnuts, and apples for the amount of lettuce. That would have made it stretch a little farther.

Baked Apples on the Grill

This was a very easy recipe and tasted great. It's a great way to use up apples that have been sitting in the fridge for too long and aren't good for eating straight. I modified it a bit because I don't have a grill. After filling the center of the apples I put them in a 9 x 5 loaf pan and put a dab of margarine on the top of each. I covered the pan in tin foil and baked at 325F for about 50-60 minutes. They came out great! I liked it with the coconut!

Tartar Sauce I

This was excellent and tasted better than pre-packaged tartar sauce! I used onion powder (half the amount as minced onion) instead of the minced. I also used season salt instead of regular.

Pumpkin Chocolate Chip Muffins

I made this as bread instead of muffins and it turned out great. Made a double recipe and cooked it in a 9x13 pan at 350 for around an hour. I didn't have ground cloves so I used allspice instead.

Cabbage Soup II

Soup was great and very filling. Made almost a gallon of soup! I used a large head of cabbage chopped, not shredded. I didn't have any celery or barley but used the extra cabbage and a few potatoes chopped instead. I would definitely make it again.

Yellow Split Pea and Frankfurter Soup

This was great! I added a cup of frozen corn once it was simmering. I also added some parsley flakes for color and flavor. I didn't have celery, so I used an extra carrot. Everyone really liked it. I would definitely make it again!

The flavor on this was excellent! It made a lot of sauce, which was nice for dipping bread in later but we still threw a lot of it away. Maybe next time I'd add some flour to the sauce to thicken it and serve it over rice or over the chicken.

These were very tasty, and an excellent way to use up sour yogurt (yogurt way past the expiration date that hasn't gone moldy yet). I didn't want to deep fry them so I dipped them in oil and then rolled them in cinnamon sugar (1/2 c white sugar plus 1 T cinnamon) and baked them at 375F for 12 - 15 minutes. They came out very airy and weren't dense at all. Plus not deep frying them made them pretty low fat.

Chocolate Pudding Cake II

This cake was amazing! You couldn't tell that it is low-fat... probably because it has more sugar than flour! I doubled the recipe and baked in a 9x13 pan for 37 mins and it came out just fine. I added 1 cup chocolate chips to the batter (folded in at the end), used 3t of vanilla extract, and skim milk instead of water for the pudding part. It was excellent! I wouldn't change a thing from what I did!
