Pumpkin Pie Bread

The bread turned out great. I ended up having to bake it at a lower temp for a little longer because it was getting burned on the outside and still raw on the inside. A tip for those who don't have pumpkin pie spice, you can make your own that works just great for this recipe. 3 tsp of pumpkin pie spice = 1.5 tsp cinnamon, 3/8 tsp allspice (or cloves), 3/4 tsp ground ginger, and 3/8 tsp nutmeg.

Sufganiyot

These were very tasty, and an excellent way to use up sour yogurt (yogurt way past the expiration date that hasn't gone moldy yet). I didn't want to deep fry them so I dipped them in oil and then rolled them in cinnamon sugar (1/2 c white sugar plus 1 T cinnamon) and baked them at 375F for 12 - 15 minutes. They came out very airy and weren't dense at all. Plus not deep frying them made them pretty low fat.

Green Rice I

This was very easy to make and tasted great. I used milk + margarine instead of evaporated milk. I also added some garlic powder and italian seasonings for flavor. Didn't have enough shredded cheese so I used a little parmesan. It turned out great! I did have to cook it for a little longer than the recipe called for.

Danish Potato Soup

I enjoyed the soup but made several major modifications to the recipe. Mainly the broth/base wasn't very thick, even after adding the flour/water mixture. I ended up adding some instant mashed potato flakes to thicken up the broth. I also had to boil the hambone for longer than an hour to get the flavor out. I used regular onion instead of green onion (because I didn't have green onions). And I didn't have any celery, so I used double carrots. I also didn't have any light cream so I used milk and added a few tablespoons of margarine. I also added about 3 times a much cabbage as what it called for and twice as many potatoes. It was a good way to use up a hambone and some cabbage. I would probably make it again.

Yellow Split Pea and Frankfurter Soup

This was great! I added a cup of frozen corn once it was simmering. I also added some parsley flakes for color and flavor. I didn't have celery, so I used an extra carrot. Everyone really liked it. I would definitely make it again!

Raisins and Rice Pudding

This is very good considering the time and ingredients. I used instant pudding instead of cook and serve and it turned out wonderful. I also used 2% milk instead of skim to make it a little more creamy. A quarter teaspoon of nutmeg also gives it a nice flavor.

Baked Apples on the Grill

This was a very easy recipe and tasted great. It's a great way to use up apples that have been sitting in the fridge for too long and aren't good for eating straight. I modified it a bit because I don't have a grill. After filling the center of the apples I put them in a 9 x 5 loaf pan and put a dab of margarine on the top of each. I covered the pan in tin foil and baked at 325F for about 50-60 minutes. They came out great! I liked it with the coconut!

These are excellent and a classic. We aren't big butterscotch people so I used peanut butter chips instead of butterscotch. I also doubled the chips on top to have a nice chocolately layer on top.

Triple Strawberry Cake

This was very good! I used a white cake (which I think had some almond extract in it) so it was very light and fluffy. Not as much of the jello ran into the cake as I would have liked so I think I need to poke bigger holes next time. It also held up well in the fridge for several days after I made it.

Chocolate Pudding Cake II

This cake was amazing! You couldn't tell that it is low-fat... probably because it has more sugar than flour! I doubled the recipe and baked in a 9x13 pan for 37 mins and it came out just fine. I added 1 cup chocolate chips to the batter (folded in at the end), used 3t of vanilla extract, and skim milk instead of water for the pudding part. It was excellent! I wouldn't change a thing from what I did!

Apple Bran Muffins

I'm giving this 4 stars because, although it didn't turn out, I did make several changes that were probably responsible for it not turning out. For those who are thinking of using a more concentrated apple juice instead of the brown sugar, substituting applesauce for the margarine, adding 2 eggs to make it rise, adding 1/2c extra of bran flakes to make up for the liquid in the eggs, and baking it in a loaf pan at 350 for 60 minutes... DON'T DO IT!! It doesn't bake all the way (the outside burns before the center gets done). Even with all my changes the flavor was still very mild (and I added 1/2t nutmeg and 1/2t allspice) -- it could be the lack of sugar with my changes. But if you are looking for more of an apple spice muffin or bread, this is not your recipe. Next time I know better... follow the recipe exactly as it says!! * SIGH*

Butternut Squash Casserole

This tastes more like a dessert unless you cut the sugar about in half! It was definitely a hit! I added some cinnamon and brown sugar to the pecans on top before sprinkling them on and it made it nice and crunchy. This will now be on my holiday menu!

Ham 'n' Noodle Hot Dish

This recipe was good but wouldn't have been as cheesy without my additions. I doubled the recipe and used cheddar cheese for the sauce and it was lacking in the cheesy flavor I was looking for. So I added 1 cup of low fat sour cream and 3 packets of dry cheese mix from the macaroni and cheese boxes (those are the noodles I used). I also topped the top with cheddar french fried onions and subbed the peas for a green bean (frozen) and corn (frozen) combo. I ended up needing more sauce because I doubled the veggies and used 3 cups of uncooked noodles, which I cooked and drained (the recipe didn't seem clear to me on that). I also added black pepper, garlic powder, and onion powder. Overall the result was great but I did make quite a few minor changes.

Apple Yam Casserole

This was excellent! It tasted like a pie filling! I left the skin on the apples and layered them on the bottom of the baking dish. Then layered canned sliced sweet potatoes on top. Then dumped a bunch of golden raisins on top. Then I made the sauce and poured it on top without mixing it in and baked in that way. I didn't use the lemon slices but instead put a touch of lemon juice into the sauce mix. It was great... better than I thought it would be!

Pumpkin Chocolate Chip Muffins

I made this as bread instead of muffins and it turned out great. Made a double recipe and cooked it in a 9x13 pan at 350 for around an hour. I didn't have ground cloves so I used allspice instead.

Tartar Sauce I

This was excellent and tasted better than pre-packaged tartar sauce! I used onion powder (half the amount as minced onion) instead of the minced. I also used season salt instead of regular.

Cuban Pork Roast II

The flavor on this was ok, but it wasn't anything great. I was expecting a much stronger flavor for how much garlic and spice was in it but the meat didn't seem to absorb much of the flavor. Next time I'd probably make the juice into a sauce to serve with the meat to get more of the spice flavor.
