Golden Sweet Cornbread
This cornbread was exactly the taste that I was looking for. Sweet, but not too sweet, slightly crisp exterior, and moist inside. I used melted butter instead of veg oil per another reviewer. I will definitely be making this again.

Chicken Quesadillas
I really appreciate this recipe. Although I used leftover rotisserie chicken and seasoned it with what I had that was similar to fajita seasoning (chili powder, smoked paprika, salt, and pepper), and didn't use the bacon or Monterey Jack cheese, I would still rate it a 5. The peppers and onions were awesome with the rest of the ingredients. I served it with Jasmine brown rice, refried bean, salsa, and avocado.

Roasted Vegetables
This was so delicious! My husband and I loved it. As other reviewers, I just used the vegetables that I had: potatoes, carrots, zucchini, celery, onions, sweet mini peppers,and garlic. I only added salt, pepper, and dry Italian seasoning only because it was what I had that was close to the original recipe. I roasted the potatoes and carrots at 375 degrees for about 20-25 min before including the other vegetables (to prevent burning of the more fragile veggies as suggested), being sure to stir well so that the olive oil and balsamic vinegar coated them well. I added additional salt and pepper as well. The total cooking time was about 40-45 min. Very pleased with the result and will definitely make this again.
