Chocolate Toffee Crunchies

I always get great reviews with this recipe. Be sure to melt the butter and brown sugar at the same time before/while bringing them to a boil or they will separate. I use a parchment lined pan as well for easy cutting.

Six Can Chicken Tortilla Soup

This is a great jumping off point for a potentially delicious soup. To kick it up a notch, I use 1-2 cut up cooked chicken breasts seasoned to taste instead of canned chicken. I also add chopped peppers and onions (usually pan seared); I season to taste with pepper, chili powder, cayenne pepper, garlic, cumin and fresh cilantro (usually I add this just before serving so it still has it's fresh, crisp taste).

Pretzel Turtles

ALWAYS get rave reviews from this one!!! Most people think you made a huge effort, so you can smile and let them believe you did or astonish them and share the secret around! I use Jumbo Rolo's on mini pretzels to get a little extra choco/carmael aspect. I always use raw pecan halves, but I bet roasted/salted ones would also be delicious!

Cowboy Cookie Mix in a Jar

Have gotten great reviews from recipients! I've made the recipe as a regular cookie recipe and it turned out wonderfully. I've been told by a few people that the brown sugar may get hard and they had to poke it with a fork to get it loose (not a hardship to me). Also that it can be a bit dry if left unused for a length of time (like it would last that long in my house!). Adding a 1-2 tbls of warm water to soften it up a lil. I've made this for Christmas gifts for at least 4 years now.

Beth's Spicy Oatmeal Raisin Cookies

Did not like the use of shortening in this recipe. It made the cookies taste like any mass produced store bought bakery cookie. While they didn't taste bad, they didn't taste like a real homemade cookie. I'd consider trying again with all butter instead of 1/2 cup shortening.

Caramel Bars

I always get rave reviews from this recipe. I prefer a thicker oat:cara-choco-nut:oat ratio, so using the same size pan; I double the oat layer dough, cutting back the butter by 1/4cup (to 1 1/4 cups total) and use 2 1/2 cups whole wheat flour instead of 2 cups of regular flour. I've also tried adding a little bit of cinnamon to the oat layer and mixing and matching chocolate chip/nut mixes which have also turned out great! Very recommended :)
