About this Cook
I was raised by a mother who learned to cook good old midwestern cooking. All the pies from scratch, crusts too. Since we lived in Arizona, I also learned authentic Mexican cooking. That's probably my specialty. I am an expert with many mexican food dishes. My chicken enchiladas and spanish rice are the best!! I just throw stuff together for them, but I am going to figure out amounts, and then write up a recipe and submit it. They are the best you've ever tasted!
My favorite things to cook
Pies from scratch, Chrismas candy, like peanut butter balls, homemade chocolate covered cherries, peanut brittle, english toffee, etc.
My favorite family cooking traditions
Pies from scratch, and a killer Thanksgiving dinner.
My cooking triumphs
My chicken enchiladas, definately!
My cooking tragedies
I tend to burn stuff. I love to turn on the broiler to get stuff brown, and then forget about it. Not a good thing, especially with a smoke detector near the kitchen.

Grandma Ople's Apple Pie
I made this for our Christmas dinner and followed the recipe exactly, and it was no doubt one of the best apple pies I have ever made. It will definitely be in my holiday repertoire next year. Really, try it.

Awesome and Easy Creamy Corn Casserole
I followed the recipe exactly except I doubled it and put it in a 13x9 pan. I had to bake it about an hour and 15 minutes, and it was a huge hit at our family dinner. I will definitely make this one again, you should try it.

Slow Cooker Chile Verde
This was to die for! My husband loved it, my kids loved it, and so did I! I followed the recipe exactly, the meat was so tender, it melted in your mouth. There was a lot of sauce left over, so you could cut down the salsa verde by one can and it wouldn't make a difference.
