Chipotle Honey Roasted Peanuts

I followed this recipe to the letter for pumpkin seeds at Halloween and they rock. I boiled the seeds in salt water first and then substituted them for the peanuts here...awesome, thanks!

These are de-licious! I served this at a wine night/party with a bunch of women and had to print out the recipe for all of them. I used an orange bell pepper, spinach tortillas and sun-dried tomato tortillas to add color.

Chicken Enchiladas II

This was good...but a bit salty for some reason. The only thing I can think of that would have made it too salty is the cream of mushroom soup...I think I'll try cream cheese next time instead.

Incredibly Cheesy Turkey Meatloaf

I had high expectations for this dish, I figured cheese makes everything better, right? Wrong. Nobody in my family really liked this, it wasn't gross, but definitely wasn't good enough to make again. I'm frankly shocked at how many people liked this...I'd try another recipe if I were you. Sorry!
