Yum! I listened to the reviews and added eggs to the béchamel sauce, and used oregano/basil/thyme for fine herbs. Cut down on the butter everywhere I could. I am pretty certain I messed up the béchamel sauce. You really do have to pay attention, which doesn't happen with 2 toddlers running loose. But, it baked up fine. Tasted great, thank you for sharing!

Ricotta Breakfast Pancakes

Family approved! Found while hunting for ways to use up extra ricotta. Followed the recipe using Hungry Jack + Trader Joes Multigrain Pancake mix because that's what I had. Cooked at a slightly lower temp than regular pancakes and made mini-pancakes (3-4 in diameter). Flavor is crisp on the outside, and a little more creamy/crepe-like in the middle. Plan to make again, but will experiment with less-processed pancake mix options.

Black Bean Brownies - ER

Great recipe! I find lots of sweets to be too sweet and carb filled. Knocks me out! The black beans in this recipe taste surprisingly delicious and don't make me feel like I'm on a sugar overload afterwards. I followed the recipe with these exceptions - upped the cocoa, add a TON of walnuts, cut down the total sugar volume a little bit, occasionally use half Splenda-half sugar. My husband loves them, and I get my chocolate fix! Thanks for sharing this.

Parmesan Chicken II

My husband makes this all the time for me. Delicious. We use skinless chicken drumsticks. After they're done- they taste as good as fried skin-on chicken!! Yummy!!

Sausage Stuffed Mushrooms II

Yummy! I made double svgs with well chopped hot italian turkey sausage & lowfat cream cheese. Agree w others- recommed baking mushrooms for 5-10min before broiling. Also added 1/8tsp garlic salt, oregano, and finely chopped onion & mushroom stems. Sprinkled parmesan cheese over tops before baking to add flavor & help browning.
