I love, love, love this recipe. It is easy and delicious. I usually cut them into 1 inch pieces and roast them a little longer until they are nice and toasty brown. I've tried it with fresh okra and frozen okra. Fresh okra is definitely better.

Avocado Irish Cream Fudge

I was pleasantly surprised by this recipe. I cut the recipe in half and didn't use the last cup of powdered sugar and it was perfectly sweet. It was quite a workout trying to stir in the sugar and cocoa powder. The mixture never got smooth and I was concerned it wouldn't turn out, but after a few hours in the refrigerator it turned into a creamy fudge. You can't taste the avocado at all, but it does create a festive swirly green layer on top.festive swirly green layer on top.

Baingan Bharta (Eggplant Curry)

Molasses Peanut Butter Crinkles

The dough tasted fantastic but the flavor of the baked cookie was only so-so. After baking the molasses and peanut butter flavors mellow. It's not peanutty enough to be a great peanut butter cookie or spicy enough to be a molasses cookie.
