I used this recipe twice - both times i added the 1/2 tsp baking powder, 1/2 tsp cinnamon, 1 tsp vanilla, and adjusted the sugar to 1/2 cup white and 1/2 cup brown. The first time I added an extra banana but it came out too mushy. The second time I kept it at 3 bananas and it came out PERFECT. Im a college student and my roommates hovered around the oven while it baked and ate it up as soon as it came out! I also had the bigger loaf pan so I adjusted the temperature to 350 for 30 min and 300 for another 30 min. It still burned a little on a the edges so I may fiddle around with the time and temp a bit more. Overall, a perfect recipe!
