Low Carb Pancake Crepes

Such a great recipe! I made a few modifications but overall this was surprisingly delicious and perfect for my low-carb diet. I used 4 oz cream cheese (softened in the microwave), mixed in 2 eggs, pumpkin pie spice, and 1 packet of splenda. I topped it with a scoop of ricotta cheese, a sprinkle of cinnamon, and fresh berries. (see photo) Next time I will try adding vanilla and maybe another packet of splenda since it could have been a little bit sweeter for my taste. Thanks for the recipe! Will absolutely make again and again!

Creamy Blueberry Pie

I followed the recipe with the following adjustments: used only 2 1/2 cups of blueberries (had a shallow pie pan), added a splash of vanilla to the pie mixture, replaced white sugar with light brown sugar in the topping, and added 1-2 tsp cinnamon to topping. Note on this recipe: the topping may take a while to make. I shaved bits of butter (~3 tbsp) into the sugar/flour/cinnamon topping mixture and mixed with a fork until it looked moist and crumbly. If it clumps too much, add a bit more flour and keep mixing til everything is moist again. Baked at 350 and it was done exactly 50 min later. As soon as it cooled, my boyfriend ate half the pie himself! He absolutely loved the crispy topping. Brown sugar makes a difference!

Just baked these this afternoon to bring in to work - I work in a cancer hospital pharmacy and shared the cookies with the doctors and nurses. Trust me, once they have a good cookie, word spreads. They were gone within an hour and I even had some overnight nurses disappointed that they missed out. I followed the recipe exactly except I followed the idea to toss the cookie dough balls in a bag of sugar/cinnamon mixture and baked at 375 for 8 min EXACT (1 min later and they started to burn). So easy to make! Thank you!

Banana Bread

I used this recipe twice - both times i added the 1/2 tsp baking powder, 1/2 tsp cinnamon, 1 tsp vanilla, and adjusted the sugar to 1/2 cup white and 1/2 cup brown. The first time I added an extra banana but it came out too mushy. The second time I kept it at 3 bananas and it came out PERFECT. Im a college student and my roommates hovered around the oven while it baked and ate it up as soon as it came out! I also had the bigger loaf pan so I adjusted the temperature to 350 for 30 min and 300 for another 30 min. It still burned a little on a the edges so I may fiddle around with the time and temp a bit more. Overall, a perfect recipe!
